ReplyDeleteI so enjoy cooking for healthy livng reasons and one just happens to be gluten free for celaic reasons. But with all the other issues, we cook uniquely our own ways and no apologies for what things are made from. Zucchini slices make a great sub for lasgana and we al eat it

Wow, I learned quite a bit from your series. I learned that I'm not alone in this diet and that it doesn't have to be as complicated or expensive as I sometimes think it will be. It's hard for me sometimes as the only person with food restrictions in my house, but now my 4 year old will ask me if things have gluten in them. It helps to have support!

I read this blog and was excited, we need a change of pace in our home from the same 7 meals every week. so told my husband I am going to try everyone of these recipes and have 30 days of exciting meals. Can't wait to try.
ReplyDeleteI just learned a new recipe this weekend at a party that I want to try and I will share with you. pulled pork with a homemade sauce of ketchup, mustard, honey) you just mix to your liking, I like mine sweet. It was awesome. You can make a pulled port sandwhich or just eat it piled on your plate like I did. Enjoy.

I just tried the microwave meatloaf and it was great! I have never managed to make meatloaf and have it taste good! not only that but both my kids and my husband liked it and that's almost impossible!!!!

It has been my experience that, when many people first learn they have to go on a gluten free diet, they often think it will require significant expense and time to prepare delicious food. While we all know that gluten free food can get quite expensive and timely to prepare, it doesn't have to, as this blog series clearly shows. I have garnered many new meal ideas from these recipes that I am eager to try. Working full time, I am always looking for quick, delicious recipes that I can whip up in no time! One of my personal favorite quick and easy dishes is pork chops seasoned with your favorite spices, wrapped in bacon, and pan seared in olive oil...absolutely delicious! Throw in some fresh, roasted zucchini and squash and some homemade applesauce, and you've got a meal!

Cabbage cups are quick, easy and gluten-free. I sauté ground meat, a garlic clove and chopped veggies (onion, bell peppers, tomato, whatever I have on hand). Season with salt and pepper. Then scoop it into in a blanched organic cabbage leaf. Healthy, yummy and low in carbs!
ReplyDeleteI would love to give this book to my mother-in-law! After being married for more than 50 years, she has recently needed to start cooking gluten-free. It's been a tough transition, and I think that a book of easy gluten-free recipes is just what she needs.
I've learned that cooking and baking gluten free isn't as hard or scary as I thought it would be :) There is a lot of information out there and I love how you make it all simple and easy to figure out!

ReplyDeleteThis has been an inspiring series. We've been a partially GF household (celiac DH) that is about to go entirely GF (possible celiac/sensitivity issues w/son) and need all the inspiration we can find.
ReplyDeleteAs it's summer now, our favorite no-cook-type GF meals are cold plates: collections of safe meats, cheeses, sliced veggies, cold beans, etc... all served together. Yum!
Thanks for doing the series!! I'm looking forward to trying them all but mostly to doing the slow cooker chicken (yum). My personal favorite gluten free quick and easy meal is quinoa with frozen veggies and maybe chicken meatballs (gfree from costco!)
