Giveaway: Gluten-Free Baking with Betty Crocker and Joseph Joseph


One of the fun things about being a food blogger is getting to try new products and equipment. A few weeks ago MyBlogSpark sent me this cool baking kit which includes a rolling pin, a pastry brush, a small rubber spatula (I happen to LOVE spatulas!) and a super cute kitchen timer in this JosephJoseph baking gift set. To be quite honest I haven't had the time YET to try out these nifty tools, but I can tell you they are super cute!


Also included in the gift set was really nice non-stick 8x8 baking pan which is perfect for brownies or 1-layer cakes! Betty Crocker (the lovelies who provided this nice set) have brand new packaging for their gluten-free products ALONG with a few new gluten-free baking mixes. I decided to go out and purchase chocolate chip cookie mix. My husband is quite the connoisseur of chocolate chip cookies...

But instead of making cookies (I'm lazy, what can I say?) I decided to use the 8x8 pan and make a batch of chocolate chip cookie brownies! TO make the brownies all I did was add the required 1 stick of butter, but instead of one egg I used two, and then added 1 teaspoon vanilla, and 1/4 cup of milk. This made the brownies more cake-like, but Michael loved them. I baked the batter in the pan for about 25 minutes at 350 degrees. That's it. Super easy, super quick.

While I'm not a huge fan of gluten-free prepared baking mixes... it is fun to have these on hand for last minute chocolate chip cookie emergencies. Michael really enjoyed the mix and said he liked the brownies as much as he would have actual cookies... so win win!

Introducing: The Everything Gluten-Free College Cookbook! Coming July 2013

Giveaway & Cool Stuff: How to store Victoria's Gourmet Seasonings


A few months ago when I received sample seasoning blends from Victoria's Gourmet, I was overwhelmed! There were so many of them! The seasoning blends came in super cute little tins, but I couldn't figure out where in the world I was going to store them. 

I have a TINY kitchen and my spice/seasoning shelf space is minimal and completely full at the moment! I also knew if I didn't keep the spices in sight, I probably wouldn't use them. So where in the world to put them... 


And then it dawned on me... I remembered seeing stores sell little tins with a magnet on the back of them for spices that could be stored on the fridge. Despite being cramped already, I could certainly put these little tins on the fridge... 

Now let me tell you something... I'm NOT a crafter... Pinterest usually bores me... and any hobby that needs more "stuff" than I already have just isn't my cup of tea... so just the thought of doing a "craft" was amusing... BUT... 

I soldiered on and bought some some small round magnets and some super bonder glue stuff that supposedly sticks anything to anything. One evening after work I took all the little tins and glued the magnets to the back of them. These were smaller magnets and if I did this project again, I would have found ones that were a little stronger and maybe a little larger... but regardless... the end result was pretty cute: 


These small magnets weren't strong enough to hold the tins up without support on the fridge alone, but when the tins were stacked up against each other they had support and didn't move! Voila... magnetized storage!

My favorite part? I LOVED the colors! It really added some pop to my kitchen and I now I actually use these spices all the time because I can see them. The cool thing about having them in this arrangement is that if you pull out a spice somewhere in the "magnetized seasoning tower" they just scoot down as if you were playing spices "Tetris!" My husband thinks it awesome and he was so surprised by my creativity!

Book Review & Giveaway: Cybele Pascal's Allergy-Free and Easy Cooking


Several months ago I received a brand-new beautiful  review copy of Cybele Pascal's latest cookbook, "Allergy-Free and Easy Cooking." And my friends... if you deal with multiple food sensitivities or allergies, this book is DEFINITELY for you. Cybele made EVERY recipe in this book free of: gluten, wheat, dairy, eggs, soy, peanuts, tree nuts, fish, shellfish, and sesame.

The book contains 75 recipes for quick and easy 30 minute meals at home. TO be honest, I receive so many cookbooks, I wasn't really sure what to expect with this book. But as soon as I started thumbing through it, I immediately smiled. These are easy, everyday, "down home" comfort foods... and that is the kind of cooking I like to do.

I'm about as far from a gourmet as you can get (although I do prefer freshly grated pepper and nutmeg, smoked paprika, and grass-fed beef... I mean you have to have some priorities right? :-) Cybele does an amazing thing here... as a sophisticated wife, mom, entrepreneur, chef, and home cook she takes the gluten-filled foods you loved and remember and turns them into allergen-free masterpieces with basic, healthy ingredients you probably have in your pantry right now.

There are a few specialty ingredients you will need for some dishes (such as Daiya dairy-free, soy-free "cheese" -- which I LOVE) but most of these items can easily be found online, if not at your local higher-end grocery store like Whole Foods.

Here are a handful of recipes that particularly caught my eye:
  • Tomato Soup with Grilled Cheese Squares
  • Creamy Mac & Cheese
  • Shepard's Pie
  • Chicken and Sausage Paella
  • Chicken a' la King
  • Salisbury Steaks with Mashed Potatoes
I had every intention of trying the Salisbury steak tonight because I have to admit, on the occasional time we had frozen dinners growing up, I LOVED Salisbury Steak... and I was SO excited when I saw Cybele's rendition of this classic ground beef steak and gravy. 

Unfortunately work has been a little crazy and we ended up having gluten-free sandwiches because this chica was too tired to chop an onion (although Cybele shares her onion-chopping secret throughout the book and I have to say, I may just have to invest in it! It sounds like it would make weeknight veggie chopping a BREEZE!)

This Week's Menu -- Whole Life Nutrition Recipes

We are actively trying to change the way we eat around here. While we've never really had a "bad" diet... we are truly trying to incorporate more whole foods and especially more vegetables and lots of  'em.

One area of cooking I have always been challenged in, is how to prepare a wide variety of fresh vegetables. I really want to learn how to make whole foods that my husband will truly enjoy. Granted it will take a bit of effort on his part as well... but he's willing... so now is the best time ever to learn!

My husband wants to lose a few pounds and while I also want to lose weight, more importantly I want to lower my cholesterol and triglyceride numbers. I've been battling those numbers for years and I truly need to get in control of my health. So right now, BEFORE the holidays I'm pledging to do that.

I'll still enjoy holiday treats, but it means in the days before and after I'm going to actively try to eat as many healthy, whole foods meals as possible.

Several months ago before my book was published Ali Segersten was kind enough to send me several copies of her newest cookbook Nourishing Meals. I was thrilled to receive Ali's cookbook. You see Ali cooks the way that I WANT to cook. I'm still learning how to use and cook whole foods on a daily basis. I grew up eating a lot of convenience foods and I still rely on many of them today (like canned vegetables and fruits, quick cooking rice, etc...) I want to learn how to make more healthy, but delicious vegetarian meals using as many fresh ingredients as I can. This book will be KEY in getting started!

Ali's beautiful new book has an incredible way of making whole foods seem simple and delicious. Her pictures are enticing and down-to-earth. Chapters at the beginning of this book extensively cover the how's and why's of celiac disease and the gluten-free diet, why their is a rise in food allergies and sensitivities, and how to raise healthy children. 

At the beginning of each recipe chapter Ali shares helpful and fun tips about the foods the cover chapters. She shares ideas for creating balanced menus, packing school lunches, quick snacks, healthy and fast breakfasts, etc... These tips alone are worth the cost of the book!! 

Ali & Tom have created a whole foods cookbook that not only makes healthy organic vegetables and fruits enticing to cook, they encourage you to learn more along the way. They want to help you and your family eat well. They believe in the power of healthy foods and reading this book will make you want to start cooking their way too.

I like to make these savory grain-free, protein-packed pancakes on a summer morning before we head out for the day. Combined with a green smoothie they create an energizing breakfast! These store well in the refrigerator, but if you prefer to make a smaller batch halve the recipe. Top each pancake with a dollop of sour cream or Cashew Sour Cream, and chopped parsley if desired. -- Ali Segersten

4 large organic eggs
3 cups grated zucchini
¾ to 1 cup almond flour
½ cup minced onion
½ to 1 teaspoon Herbamare or sea salt
freshly ground black pepper
olive oil or butter for cooking
Mix all ingredients except the oil together in a medium-sized bowl. Batter will thin a little as it sits.

Heat a 10-inch stainless steel skillet or cast iron skillet over medium-low heat. Be sure to heat your pan long enough before adding the oil and batter, otherwise the pancakes will stick. Add about 1 tablespoon olive oil. Drop batter by the ¼ cup into the hot skillet. Cook for a few minutes on each side. Repeat with remaining batter, adding a little oil or butter to the skillet before cooking each pancake.

Yield: 10 to 12 pancakes

Kitchen Tip: A well-seasoned cast iron skillet keeps pancakes from sticking to the bottom of the pan and is especially useful in this recipe.

GIVEAWAY & Review : Celebrate Crock-tober with a brand new Crock-Pot!


It's that time of year. Crock-tober! When fall begins and you start wanting savory, comforting home-cooked meals. And one way to make those meals super easily is with your slow cooker! 

A few months ago a special friend helped me contact the folks at Crock-Pot because I hoped that they might be willing to work with me to provide some special giveaways for you, my dear readers! Especially since I used Crock-Pots extensively through the recipe testing for my new book

It wasn't actually because I loved the company at the time, it's simply that Crock-Pot was the brand of slow cookers I had in my kitchen... and after all that testing... I realized just how much I love these simple machines. The Crock-Pot brand is known for their high quality slow cookers and they like to call themselves, "The Original Slow Cooker." Which is fine by me considering I own 5 of them!  

My favorite size is actually a very simple, medium-sized 3.5 - 4 quart slow cooker. It works best for most of the items I make since I'm only cooking for two people (with the hopes of leftovers!)

Crock-Pot #1 - a 6-qt. Cook & Carry Slow Cooker
Retail Price: $39.99

After speaking with a Crock-Pot representative, they graciously offered to send me two slow cookers to test myself and review... ALONG WITH two brand new slow cookers to giveaway! I was thrilled at the offer... because you can never have TOO many slow cookers right?

The first one I tested was the 6 quart Cook & Carry manual slow cooker. A manual slow cooker is simply a slow cooker with a manual dial. It's very basic and the knob is the only thing you have to worry about setting. 

A few functions of this slow cooker include: 
  • 6 quart capacity
  • removable oval stoneware
  • four convenient manual temperature settings
  • the stoneware AND lid is dishwasher-safe (I really need a dishwasher!)
  • several naturally gluten-free recipes are included in the instruction manual
  • this model has a lid-mounted locking system for portability AND a gasket lid to keep the unit sealed to prevent spilling. 


This was my favorite of the two slow cookers.  One thing I REALLY loved about this new model is that the oval base of the slow cooker and the stoneware insert is wider than my old one. In my opinion, the wider the base of your slow cooker, the more versatile it can be. For instance I could make bread with this slow cooker because the base is wide enough to hold a small loaf pan. 

Another big plus? When the base is wider, you have MUCH more room to do big meals like roast a whole chicken or do a large beef or pork roast with plenty of room to spare for adding extra veggies or sauce, or if you want to make a big pot of soup, etc... 

I also loved the color of this slow cooker. I realize color has nothing to do with function... but when things are pretty it's not only nice to display in the kitchen but it's fun to take other places to show off! The red is a very metallic, deep red which went beautifully with my black kitchen appliances. (And doesn't food that is presented in a beautiful dish/carrier taste better anyway?) 

One more bonus: fantastic carrying handles! Big, wide handles so the slow cooker can be picked up easily and transported without worry of dropping it due to the handles being too small or getting too hot. My husband often complains about how small the handles are on a few of my smaller slow cookers, so he was very impressed his hands fit this model perfectly.

Crock-Pot #2 - 7-qt. Smart-Pot Slow Cooker
Retail Price: $49.99

Slow cooker number 2 that we are giving away and that I tried was a 7-quart Smart-Pot Slow Cooker (winners may receive EITHER a 6 or 7 quart version of this model). This slow cooker is a little bit larger than the Cook & Carry and functions a little bit differently. 

A few functions that this slow cooker includes are: 
  • 6 or 7-quart capacity
  • removable oval stoneware
  • four convenient timer settings
  • automatically shifts to warm when cooking is done
  • stainless-steel finish
  • dishwasher safe stoneware & lid
  • several naturally gluten-free recipes are included in the instruction manual


This slow cooker is the largest one I have and it's perfect for roasting a large chicken, a Christmas ham, and making a loaf of gluten-free bread (with wiggle room!) It's also great for cooking a HUGE pot of pinto beans or green beans, or soup! This newer model also contains the wider base than my older slow cookers and of course the awesome digital time settings. My favorite thing about the digital time settings is having an indicator light telling you the machine is on!  There have been countless times I've forgotten to turn on my slow cooker and realized 4 hours later nothing was cooking!

This slow cooker doesn't have the cool carry and leak-proof features, but the digital timer is very nice. However if you make a lot of recipes from my cookbook, you'll have to remember to set your own timer because MOST of my recipes cook for 3 hours on high or 6 hours on low... I feel the traditional 4/6 hour HIGH settings and 8/10 hour LOW settings are WAY too long for most slow cooker recipes... because newer slow cookers cook hotter than old ones due to government food safety regulations, you don't need to cook foods as long in nearly ANY newer slow cooker.

Both of these slow cookers worked really well in my opinion on both low, high, and warm settings. To top it all off, both of these models are really beautiful and will match a huge variety of kitchen counters and appliances!

The Everything Gluten-Free Slow Cooker Cookbook BIG GIVEAWAY!


Over the past two months I've shamelessly begged & pleaded for you, my dear readers, to help me spread the word about my new book, my blog, and my facebook page. And you did. You shared with friends & family, you left kind and uplifting comments on my facebook page and I'm incredibly grateful! We've reached over 3,000 likes on facebook and that was the magic number I was hoping for in time for the book release! The book (while still not officially released) has been flying off the virtual Amazon shelves and has received very positive reviews thus far! And now it's time to share with you!!

December Sanity Challenge -- Self Care Through the Holidays


Last week I shared an introduction on Cheryl Harris' December Sanity Challenge. A challenge to truly take the time for self-care through the holidays, with specific goals.

My goals for this challenge were quite simple. I didn't want to make rigid goals that I knew I couldn't keep through the crazyness of the month.

My goals are:

  • To journal every day, for as little or as long as I needed too
  • Along with (or a part of) journaling, to Pray often
  • To continue following a Paleo Food Plan
My "unofficial" goals were to allow myself to say NO, to not stress over food, to "breathe" when I started to feel overwhelmed (to purposefully take very deep breaths and allow them to physically relax my body), and to recognize and put a name to my feelings when I started to feel stressed (ie... this is bothering me and makes me feel disrespected because I have feelings of Jealousy, Frustration, Loneliness etc... to actually vocalize or write down the WHY behind why I was/am upset.) 

Following Through: 
  • Journaling: I've been a "journaler" on and off most of my life. I have paperback journals starting from when I was 7 years old. Writing soothes me. As we've come to live in a mostly digital age, I've been very hit & miss with my journals. It's hard to carry it around everywhere with me, and since most of my writing takes the form of blog posts or google word documents now, I was determined to find a digital way to start journaling. I did a little research and found a really neat website for PRIVATE journaling called Penzu. The privacy was important to me. When I journal, I was to say whatever is on my mind, work through my thoughts and feelings, and do it with an open mind and heart. I have also used Google documents in the past to journal, but to be honest, it's a very boring way to journal. It isn't pretty. And as silly as it sounds, it's a lot more meaningful to journal, when you can share your feelings on a beautiful surface or with a beautiful instrument. With all of these "requirements" of digital journaling I found a great service called "Penzu.com" -- which allows you to journal privately for free. You can share it with friends if you'd like, but it's primarily meant to be a private journaling space for you to share your thoughts and feelings. If you want to upgrade to a "Pro" account, you can have a "pretty" journal and change the basic settings. I found this service to be a really neat way to encourage my goal of journaling. I have journaled nearly every day since discovering Penzu. It even sends me a reminder in my email to take the time to share my thoughts. 
    • What's gone well? I have discovered that when I'm frustrated or suddenly stressed about something (and it can be hard for me to initially pinpoint WHY I'm stressed) -- by opening up my online journal and just starting to write I can work through my feelings and discover the WHY behind my thoughts and actions. While I haven't journaled every single day, I feel like by making it a priority I have been able to have a much better Holiday season so far! 
  • Prayer: In my own personal spiritual life,  prayer is extremely important to me. Connecting with my Creator on a regular basis helps me to find peace and strength. I haven't done this as often as I would like too, so my goals for the rest of this month are to start each morning with a small prayer using a devotional I have placed next to my bed. The days I have been able to initiate prayer I often write it out in my online journal as well. 
    • What's gone well? When I'm actually journaling my prayers, I feel like they are more concrete. I have a way to look back and see what I was feeling and why. I have to way to see how prayers are answered, how life is progressing, and how good life really is. I'm thankful that with daily journaling I've had a space to share my prayers on a more regular basis.
  • Paleo Food Plan: I have to admit this has probably been the main area in my goals that I haven't followed through with very well. I would say I'm eating Paleo foods probably 80% of the time. Which considering this is my first Holiday season using these food guidelines, that's not too shabby. I hope by next year, I will have a better sense of how to handle the pressures of sugary-carb-filled (even gluten free!) holiday treats and still be able to eat well for my body. I didn't want to be TOO strict in this area, because food and I don't always have a good relationship. I know if I am too strict I will beat myself up which will stress me out and THEN cause me to want to eat EVEN MORE for emotional reasons. So I've found that right now my main meals are all paleo, but I am allowing myself to have holiday treats. I will be more strict with Paleo beginning in January and more importantly after I've finished writing my cookbook. 
    • What's gone well? I think being able to follow Paleo during the Holiday season at LEAST 80% percent of the time has been a very postive and good thing! I haven't baked nearly as much as I have in years past. And the baking I have done has been for a specific reason or for other people. The gluten free baked goods that I have made, have not stayed in my house. I know my body feel so much better with less sugar and refined carbohydrates. Well Fed by Melissa Joulwan {paleo cookbook review & giveaway}


Earlier this week I saw a post on facebook about a new paleo cookbook called "Well Fed.The cookbook (which is available both as an e-book and a printed soft-cover) was written by Melissa Joulwan, author of the blog "The Clothes Make the Girl." I had heard of Melissa's blog before, but didn't realize she was living a paleo lifestyle. This made me excited! I contacted Melissa immediately and asked her if I could possibly have a review copy of her cookbook. Melissa's book was not only gluten free & grain free, legume free, and sugar free... Melissa's book was also dairy free! Some paleo/primal cookbooks allow dairy in their food plan, but as I'm extremely intolerant to dairy, I was thrilled to know this cookbook could indeed feed me well.

Melissa graciously sent me a digital copy of her cookbook and also offered for one of my readers to win a copy as well. (See details at the end of this post!)

I have to say, I'm not sure exactly what I was expecting with Melissa's book... but I sat down and read it completely from cover to cover. This is a BEAUTIFUL cookbook (and I think I'll be putting the soft-cover version on my Amazon wish list!)... Melissa's unique artistic talent shines through on each page through the photography, through the layout of the pictures, and through Melissa's own personal story of cooking with family and love.

You will fall in love with this cookbook. My favorite part of the cookbook is Melissa's technical explanation of how to easily prepare your foods for the whole week in a couple of hours. She shares a wonderful technique called "Hot Plates" which shows you how to make super easy combinations of your favorite proteins, vegetables, fat, and spices to create a fun & different meal each night of the week. I have already referred to her "Hot Plate" ideas for several of our weekly meals! A completely brilliant concept Melissa!

Also included in the book is a whole chapter on recipes for different sauces and seasonings, explaining if you make a few of the sauces (such as her Sunshine sauce, mint chutney, Sri Lankan Curry Sauce etc...) ahead of time, you'll always have a great condiment to really give your homemade meals a truly gourmet touch!

Throughout the book Melissa shows you how to cook and run your home kitchen as efficiently as a  restaurant kitchen. She gives you really helpful tips and ideas on how to make cooking fun, innovative, and something you'll enjoy. And the bonus... every single one of these recipes will make you feel great, energetic, and absolutely well fed!
