Celebrating Local NC Food: Baby Back Ribs with the NC Pork Council


This month's signature cut with the NC Pork Council is RIBS! OTHER than my husband (who isn't a fan of any meat on the bone....I know... I have no idea...???)... WHO doesn't love ribs?

I love them! And honestly, I don't make them as often as I should. Especially in the summer, as ribs just seem like the ideal hot summer meal.

I've chosen my slow cooker as my cooking element of choice for these recipes with the pork council! I love using a slow cooker, it's so easy and since we don't grill out much, it's a great option. Also, proteins are not my cooking specialty and it seems like whenever I go the easy route and make them in the slow cooker, they're always perfect!

When I think of ribs, I generally think of savory, crispy pork slathered in a tangy barbecue sauce. I didn't have any barbecue sauce on-hand and I wanted to go in a different direction. I wanted to do something with an Asian flavor, so I started looking up recipes in my cookbooks at home.


I ran across a recipe in "The Food Lover's Make it Paleo" cookbook by Bill Staley and Haley Mason. The recipe sounded good to me because it had Asian flavors, but also didn't use soy sauce, which is really helpful since I'm allergic to soy.

I changed the recipe a bit, just adding several additional spices that we enjoy. You basically make an easy rub for the ribs and then several hours into slow cooking you drizzle a sesame ginger glaze over them.

The ribs caramelize will then caramelize a bit and with the fat that cooks through, they have a wonderful flavor and texture. When they have finished cooking they are fall-off-the-bone delicious. We served the ribs with slow cooked collard greens &amp (made in another slow cooker) and cinnamon sugar sweet potatoes, which I covered in foil and placed beneath the ribs. The sweet potatoes cooked right underneath the ribs, a technique I love using with root vegetables and even ears of corn. That's another fun thing about using a slow cooker, you can cook several components of a meal in addition to one-dish meals! Super easy peasy and kinda fun as well!


Slow Cooked Chinese Spiced Ribs
adapted from a recipe in "The Food Lover's Make it Paleo" by Bill Staley and Haley Mason
free of gluten, dairy, soy, eggs, and nuts

Rub Ingredients: 
  • 3-5 pounds baby back ribs
  • 1 tablespoon Chinese five-spice powder
  • 1 teaspoon curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon Saigon cinnamon
  • 3 tablespoons brown sugar or crystallized maple sugar or coconut palm sugar
Glaze Ingredients: 
  • 3-4 tablespoons sesame oil
  • 1/3 cup coconut aminos (a savory substitute for soy sauce, if you're cool with soy, use GF soy sauce!)
  • 1 teaspoon fish sauce
  • 2 cloves garlic minced
  • 1 tablespoon ginger root, minced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon molasses or brown sugar
Directions:
  1. In a large bowl of a bag mix together Chinese five-spice powder, curry powder, ground ginger, ground cardamom, Saigon cinnamon, and brown sugar. 
  2. Pat the rub generously over the baby back ribs, that have been cut into portions. Place the ribs into a greased 4-6 quart slow cooker and cook on LOW heat for 4-5 hours. (Alternately, you can cook on HIGH for 2 hours)
  3. Around the 4-5 hour mark mix the glaze ingredients together in a small bowl or glass measuring cup. Pour evenly over the ribs and continue to cook ribs another 2-3 hours on low heat. (Alternately, IF you are cooking on HIGH heat, around the 2-3 hour mark, mix the glaze together, pour over ribs and cook an additional 2 hours on HIGH heat.)
  4. When ready to serve, cut slow cooker off and allow ribs to cool for 30 minutes before serving. We served with slow cooked collard greens and cinnamon-sugar sweet potatoes.

Product Review: Cybele's FREE-to-EAT Oatmeal Raisin Gluten-Free Cookies



I bought a box of these cookies at my local Food Lion grocery store a few weeks ago. I bought it on a shopping trip to replenish my desk drawer at work. I always try to keep a few gluten-free options in my desk for that inevitable 3 pm snack attack!

I was excited to find Cybele's cookies in my local grocery store. We don't exactly live in a gluten-free abundant area, so whenever I find a new snack that fits my dietary criteria it's fun to give it a try.

My first thought about these cookies was the box was quite small (which really isn't that unusual for gluten-free baked goods). It has about 12-13 cookies in it and suggests 2 cookies per serving. The box of cookies cost $4.59, which in my experience really isn't too bad a price for gluten-free products. This means the cookies were about .38 a piece.

Nutritional Info: 
  • Calories: 110 (for two)
  • Total Fat: 4 grams
  • Cholesterol: 0 milligrams
  • Sodium: 85 milligrams
  • Total Carbohydrates: 20 grams
  • Dietary Fiber: 1 gram
  • Sugars: 11 grams
  • Protein: 1 gram
Ingredients:  Gluten-Free Oats, Raisins, Brown Sugar, Organic Palm Oil Shortening, Gluten-Free Flour (Brown Rice Flour, Potato Starch, Tapioca Flour), Evaporated Cane Juice, Water, Fructose, Golden Flaxseed, Brown Rice Syrup, Grap Juice, Rice Dextrin, Vanilla Extract, Baking Soda, Xanthan Gum, Sea Salt, Sunflower Lecithin, Cinnamon.


I have to tell you that when I tried the cookies, I wasn't sure what to expect. MOST packaged gluten-free cookies are very hard and crisp... which generally I don't mind. I like a crisp texture now more than I did in my pre-gf days... however it's nice to find a soft cookie.

THESE cookies were truly fabulous! 

They were soft and chewy! The texture was really good for a packaged cookie! The cookies were perfectly moist and the raisins, big and delicious. I felt like the company didn't skimp out on the fruit, which was nice. You had a bite of raisin with nearly every bite! You can taste just a hint of cinnamon in each cookie and they were definitely sweet, but not overly sweet.

I love that Cybele created this recipe using oats and flaxseed, along with being dairy-free AND egg-free! Quite a feat for a GOOD gluten-free cookie! These cookies are ideal for kids with food allergies because they are "top 8" free, so no peanuts, dairy, eggs, wheat, soy, tree nuts, fish, or shellfish. SO a great option to take to school functions and for weekly lunches! They are also baked in a dedicated gluten-free facility so you can rest assured they are free from cross-contamination!

If you wanted too, I think you could easily microwave the cookies for about 5 seconds to give them a warm, "fresh - out - of - the - oven" flavor.

They were really pretty cookies and they looked homemade, not like a store-bought cookie.

I will definitely buy these cookies again, I think they would be great to have at home in the back of the cabinet for a time when you have unexpected company and need a nice dessert!

Product Review: Taste Guru Gluten-Free Subscription Box, May 2013


I signed up to try TasteGuru, a gluten-free monthly food subscription service. It's kinda pricey, I signed up for the $24 a month plan, so I could cancel anytime. You generally get a box of 5-7 different gluten-free items. Many of them are items that are new to the gluten-free food market.

Here are the goodies that were included in the May 2013 box: 

So far I've tired the white cheddar popcorn (YUM!), one of the toaster pastries (good! better than the Eco Planet brand) and the Falafel Chips (different, but good!).  Michael also tried the Gratify pretzel thins and loved them (they had soy flour, so I couldn't eat them). He enjoyed the pretzels so much he took them to work for a snack. 

To be honest, I'm not sure it's really worth $25 for the products in this particular box, but then again as we all know ANY gluten-free processed food is going to be quite a bit more expensive than it's "wheat" counterpart. So I may be comparing the cost to what I would assume the same non-GF products would cost. 

I think the most fun part about this box is simply getting to see a neat variety of new gluten-free products every month. You can see if you like them, share them with other gluten-free friends if you don't!

Book Review & Giveaway: Cybele Pascal's Allergy-Free and Easy Cooking


Several months ago I received a brand-new beautiful  review copy of Cybele Pascal's latest cookbook, "Allergy-Free and Easy Cooking." And my friends... if you deal with multiple food sensitivities or allergies, this book is DEFINITELY for you. Cybele made EVERY recipe in this book free of: gluten, wheat, dairy, eggs, soy, peanuts, tree nuts, fish, shellfish, and sesame.

The book contains 75 recipes for quick and easy 30 minute meals at home. TO be honest, I receive so many cookbooks, I wasn't really sure what to expect with this book. But as soon as I started thumbing through it, I immediately smiled. These are easy, everyday, "down home" comfort foods... and that is the kind of cooking I like to do.

I'm about as far from a gourmet as you can get (although I do prefer freshly grated pepper and nutmeg, smoked paprika, and grass-fed beef... I mean you have to have some priorities right? :-) Cybele does an amazing thing here... as a sophisticated wife, mom, entrepreneur, chef, and home cook she takes the gluten-filled foods you loved and remember and turns them into allergen-free masterpieces with basic, healthy ingredients you probably have in your pantry right now.

There are a few specialty ingredients you will need for some dishes (such as Daiya dairy-free, soy-free "cheese" -- which I LOVE) but most of these items can easily be found online, if not at your local higher-end grocery store like Whole Foods.

Here are a handful of recipes that particularly caught my eye:
  • Tomato Soup with Grilled Cheese Squares
  • Creamy Mac & Cheese
  • Shepard's Pie
  • Chicken and Sausage Paella
  • Chicken a' la King
  • Salisbury Steaks with Mashed Potatoes
I had every intention of trying the Salisbury steak tonight because I have to admit, on the occasional time we had frozen dinners growing up, I LOVED Salisbury Steak... and I was SO excited when I saw Cybele's rendition of this classic ground beef steak and gravy. 

Unfortunately work has been a little crazy and we ended up having gluten-free sandwiches because this chica was too tired to chop an onion (although Cybele shares her onion-chopping secret throughout the book and I have to say, I may just have to invest in it! It sounds like it would make weeknight veggie chopping a BREEZE!)
