Jodi's Simple Vegetarian Antipasto Salad

Jodi decided to save the day here at Gingerlemongirl.com... I told her that my poor blog had been neglected the past few months and I needed some new recipes. SO she went home, made her current favorite lunch salad and took pictures. Sent them to me and said, "Here you go, I fixed it."

So here's Jodi's salad! We couldn't really figure out what to name it, but it's sort of an antipasto salad sans any meat... so it's vegetarian right? ;-)

Whatever it is... it's good!


I actually made my own version of the salad this week and used mini cucumbers and heirloom cherry tomatoes and that worked great too! However, I love the half-moon cucumbers in Jodi's salad!



And you really can't beat fresh mozzarella! Especially when it soaks up all the tomato, cucumber, and red wine vinegar goodness!


Jodi's salad is quite simply:
  • a chopped tomato (or halved cherry tomatoes)
  • black, seeded calamata olives
  • green olives with or without the stuffed pimento
  • half a cucumber, sliced (or 2 sliced mini cucumbers)
  • half a ball of fresh mozzarella, cubed 
  • sliced banana peppers (optional... I left these out! You can haz them Jodi!)
  • whole salad drizzled with balsamic vinegar or red wine vinegar 

That's it! Just mix it up, refrigerate and have for lunch! 

I used a fancy-schmancy smoked balsamic vinegar from The Olive Wagon in Raleigh, NC.  Use whatever your favorite red wine or balsamic vinegar is, use your favorite cheese, make up your own salad for a quick and easy weekday lunch! :-) Thanks for saving the day Jodes! :-)

Cumin Honey Salad Dressing Recipe

Last night was grocery night, on grocery nights in addition to getting a week's worth of food, it's also the night I try to buy something super quick for dinner. Because after grocery shopping who wants to spend hours making dinner? (Well, I don't... lol) I bought some of our favorite chicken salad from a local barbecue chain and some sweet potato patties (you southerners will know what those are... lol.... my husband loves them!)

And to round out the meal I decided to use up a package of angel hair coleslaw I had at home. Why do I buy pre-cut cabbage? Because it's easy, that's why... :-) And it makes awesome low carb gluten-free "noodles"... no, it really does! Try the 'angel hair coleslaw' in your chicken soup!

But I wasn't feeling it for a mayo-based coleslaw. So I decided to play with the recipe they had on the package which was for a basic vinegar & oil type dressing.


I made a bunch of substitutions since I didn't have everything the recipe called for. We tried it and it was good, but it needed something. I asked Michael to taste it and tell me what was missing. He tried it and thought for a minute and then said, "Vinegar. It needs some bite... and maybe a little more honey." 

He's getting better at this than I am. 

Because he was absolutely right. That's exactly what it needed. A little bit more bite. A little bit more sweetness. Voila... a brand new, no-mayo coleslaw! 

And the fresh parley throughout the mix.. seriously awesome! If you're a fan of cilantro, use that instead, it will really enhance the flavor of the cumin.


Cumin Honey Dressing for Salads
free of gluten, dairy/casein, soy, and eggs
adapted by Carrie & Michael Forbes, from a recipe on the Dole Angel Hair Coleslaw package

Ingredients: 
1/4 cup good olive oil
3 tablespoons lime juice
2 tablespoons white balsamic raspberry vinegar (I used this kind, but use any kind of balsamic vinegar!)
2 tablespoons honey
1 tablespoon freshly chopped parsley
1 teaspoon cumin
1/4 teaspoon sea salt
1/4 teaspoon ground pepper

Directions: 
In a medium-sized bowl whisk together all ingredients. If using immediately add 1 (10 oz.) package of salad mix or shredded cabbage for coleslaw. If saving for a future use simply pour into a glass jar with an airtight lid. Will keep in the refrigerator for up to two weeks.

PS... we also added sliced almonds and toasted sesame seeds to each serving! Really good.

Gluten Free Sardine Salad -- by Valerie of City|Life|Eats

Today's guest post is from Valerie at City|Life|Eats, a wonderful gluten fee & casein free blog. Valerie is sharing a recipe for sardine salad which I'm really excited about because I'm actually a fan of sardines... and you should be too as they are so incredibly healthy for you!


I am so excited to be guest blogging for Carrie here at Ginger Lemon Girl.  My name is Valerie and I blog at City|Life|Eats about mindful living, allergy-friendly eats and city life.  I first discovered GLG last year, when I began to explore whether I had food intolerances (which my research had indicated might be the common denominator between several ongoing health issues I was dealing with) and was looking for tasty food-intolerance-friendly recipes to complement the new diet protocol my ND had put me on. I am so grateful for Carrie's upbeat tone, wonderful recipes, and how she is always introducing us to other great bloggers.  Through Carrie, I discovered Meghan Telpner, for example, which came in particularly handy when part of my dietary restrictions included switching to a lower-glycemic way of eating.

Fast-forward 15 months later, and I feel better than I ever have as an adult.  While I continue to work with my both my doctor and ND towards even better health, blogs like GLG have been a huge part of this adventure and provided with me with a sense of community.  I eat completely gluten-free and dairy-free (as gluten and dairy are my main two trigger foods) but I also avoid many other foods for various reasons, and generally eat a plant-based diet with the occasional addition of wild-caught fish or lean grass-fed meats.  I had been blogging for a couple of years about mindful living, green beauty, city life and yummy eats, so adjusted my blog to reflect my gluten-free, dairy-free recipes and I focused my food-related posts to be "food intolerance friendly."

Since Carrie recently wrote about the challenges of cooking fish, I wanted to share with you one of my favorite fool-proof approaches to eating fish: canned sardines.  They are sustainable, do not require cooking, and are inexpensive.  While I enjoy a nice piece of fresh wild-caught salmon, whether grilled or broiled, I do love the convenience of canned sardines. And yes, I agree, sardines can taste fishy.  

Today's recipe removes the fishiness out of the equation and adds lots of terrific fresh flavors and vegetables.  If you are trying to upgrade from a basic tuna and mayo sandwich, I hope you consider trying this sardine salad.  The avocado lends it delicious creaminess, making mayo unnecessary, and the lime juice is a perfect foil to the fishiness of sardines.  This sardine salad is delicious on gluten-free bread or crackers, but I also really enjoy it by scooping it with celery or carrot sticks.


Sardine Salad (Gluten-Free, Dairy-Free, Egg-Free, Soy-Free)
Serves 1-2

• 1 can boneless, skinless sardines, drained
• 1/2 cup diced carrots
• 1/4 cup diced celery
• 2 tablespoons chopped scallions
• 2 tablespoons sundried tomatoes, finely chopped
• 2 tablespoons chopped parsley or cilantro or basil (use what you have on hand)
• Juice of two limes, separated
• 1 jalapeño chili, with stem, seeds and ribs removed, finely chopped
• Pinch of sea salt
• 1 avocado, pitted, peeled and diced

Place sardines, carrots, celery, scallions, sundried tomatoes, herb of your choosing, jalapeño (if using), juice of one lime and salt in a bowl.  Mix bowl, breaking up the sardines into flakes.  Add avocado and taste to adjust seasoning. I usually add about half the juice of the second lime, but it is really up to you. If you are not serving immediately, you can make the recipe up to the addition of the avocado and have the salad sit for a couple of hours and even overnight in the refrigerator. Add the avocado immediately before serving.
Note: just as with any tuna fish salad recipe, feel free to swap ingredients or adjust ratios – if you like celery better, add more celery.  Swap diced red onion for the scallions. Add hot sauce.  Whatever makes you happy.

If you want to bring this salad to work for lunch: When I make this salad to bring to work, I add all the ingredients up to the avocado and only use the juice of one lime.  Then I bring this little kit you see in the picture immediately above, where I pack the sardine salad in one container and my celery and carrots in another, along with an avocado and a lime.  When I am ready to eat the salad at work, I cut the avocado and add it to the salad along with some freshly squeezed lime juice.  It makes for a delicious fresh-tasting lunch that transports you away from the office.

Day 26 - Sara's Bruschetta Pasta Toss


One thing I love about summer is spending time outside enjoying the beautiful Colorado weather. Needless to say, that usually doesn’t include spending time in a hot kitchen with the oven on. Fresh salads are a great way to avoid turning on that oven. However, they can get boring. Sometimes the thought of eating one more bite of lettuce makes me sick. The problem is that salads are a wonderful way of getting your multiple servings of fresh veggies in a day.

Instead of that boring lettuce, try using a gluten free pasta. Shop around to see which kind agrees with your tastes and texture preferences. I personally love quinoa pasta – its probably the closest to wheat pasta that I’ve found. Recently I created a Bruschetta recipe post. Bruschetta is simply an Italian style salsa, which incorporates fresh veggies, some herbs and garlic on top of a piece of toast. I figured that an interesting concept would be to make this Italian salsa into a pasta salad. So, while you will have to turn on your stove to make the pasta, this is a quick, light, wonderfully versatile dish that you can bring to picnics, potlucks, or any family get-togethers (or just enjoy on a hot summer day from the comfort of your own home).


Sara's Bruschetta Pasta Toss

4 roma tomatoes, diced
1 zucchini, diced
8 leaves fresh basil, chopped
2 clove garlic, minced
4 Tbsp olive oil
2 Tbsp white wine vinegar
1-2 tsp sea salt
1 box gluten free rotini pasta

Directions
  1. Prepare the pasta according to package directions. Rinse with cold water. Drain and set aside.
  2. In a large bowl (to cut steps, use whichever bowl you plan on serving your pasta salad in), mix together tomatoes, zucchini, basil, garlic, olive oil, white wine vinegar, and sea salt.
  3. Refrigerate for 15 minutes (this will allow the flavors to marinate).
  4. Toss the pasta with the tomato mixture. Either serve or refrigerate.

30 Days Gluten Free Quick & Easy Meals: Day 8 - Claire's Asparagus Salad with Strawberries

Day 8: Claire's Asparagus Salad with Strawberries and Maple Tahini Dressing


I have only being living gluten-free for about 7 months now, having been diagnosed with celiac disease last Thanksgiving. That was my first pie-less and stuffing-less Thanksgiving and it was rough. Further, I had to rethink all of my standard meals. No more pasta (until I discovered rice pasta from Trader Joe’s), fresh bread, or breaded chicken. I didn’t even know what to snack on, since crackers, pretzels, and regularly available office baked goods were out of the question.

Going gluten-free changed my diet in more ways than just eliminating gluten. I learned to eat healthfully and balanced for each meal and snack of the day (with the help of a nutritionist). It has also inspired a real passion in me for food and cooking. On weekends, I love going to farmer’s markets and spending hours cooking or baking, but the reality is, on weeknights, after a long day at work, I rarely have the energy to devote to a laborious meal. That is why, when I saw Ginger Lemon Girl Carrie’s blog about quick and easy gluten-free dinners, I knew I had to contribute. Over the past 7 months, I’ve learned that you can throw together a healthy, delicious, and interesting meal in 30 minutes, no problem.

This recipe is great for spring and summer. Salads are great for when the mercury starts rising and you no longer crave the stews and heavier meals of the winter. Asparagus and strawberries are in season, which makes this salad especially good, since you can pick up your ingredients locally.



Asparagus Salad with Strawberries and Maple Tahini Dressing
serves 2-3

Salad
1 bunch of washed spinach leaves
1/2 bunch of asparagus, chopped into 1 inch pieces
5-10 strawberries cut into quarters
1/8 cup of walnuts
1 ½ cups of your protein of choice (beans, especially chickpeas are delicious in salads, but if you crave meat, I’d go for chicken strips- sautéed in olive oil with some salt and pepper)

Dressing (from Gluten-Free Goddess)
2 tablespoons sesame tahini
1 tablespoon extra virgin olive oil
2 tablespoons maple syrup
2 tablespoons balsamic vinegar

Prepare the asparagus by snapping the bottom of the stems off and chopping the asparagus into 1 inch pieces. Steam the asparagus for 1 minute and then run them under cold water to stop them from cooking (also called blanching). You want the asparagus crisp, but cooked. Toss the asparagus with the spinach leaves, strawberries, walnuts, and your protein. Whisk the dressing ingredients together and drizzle over each plate.

Apple Mint Salad and a GF BBQ Party!


I was invited to a virtual Gluten Free BBQ Party and so are you! Visit Kate at Gluten Free Gobsmacked to find out how you can participate and "come along" to the Gluten Free BBQ!!






For this event, I signed up for the letter "A." This meant that I would bring a food or dish that started with "A." Originally I wanted to make something with avocados, and I tried several things (other than salsa) but they didn't turn out so great.

So I decided to stick with something I know well! Apples! I love apples. Apples are a staple crop where I grew up in the mountains of VA, so I thought I'd make an apple salad.

Recently, Rachel from The Crispy Cook (formerly Meat Free Wheat Free) had a book giveaway and I won! She sent me a copy of Tassajara Cooking by Edward Espe Brown. I am thrilled with this cookbook! It is a wonderful book that focuses on simple and fresh methods for cooking and serving fruits and vegetables! Rachel had no idea how much I needed this cookbook!

I chose a quick apple salad recipe out of the book and adapted it to include a very simple, healthy, and delicious dressing! ('cause this southern gal has to add a dressing to EVERY salad. Just accept it! ;-)

I love the fresh mint pared with the sweet apples and sour grapefruit! This is not a combination I would have thought of on my own, but it's lovely. Michael doesn't like grapefruit, and next time I make this I may substitute an orange so he can enjoy it too!

Apple Mint Salad

Adapted from Tassajara Cooking by Edward Espe Brown

2 large gala or granny smith apples, diced
1 large ruby red grapefruit, pared and diced

3-5 leaves fresh mint

1/4 cup orange juice

2 tablespoons greek yogurt

1 tablespoons honey


Directions:

In a pretty glass serving dish mix chopped apples and diced grapefruit pieces.

"Chiffonade" your fresh mint by rolling the leaves together horizontally, like this. Then finely cut the roll into small slices, this will result in a chiffonade cut. Feelin' fancy now aren't you? Oh come on.. I know you do! (These pictures are courtesy of The Pioneer Woman Cooks!!)

Toss the chiffonaded mint into the apple and grapefruit.

In a small measuring cup mix together the orange juice, honey, and greek yogurt. Drizzle over the salad and toss to coat. Serve immediately or chill for several hours. This salad is delicious and refreshing either way!! Enjoy!

The time for salads!




Summer is absolutely the time for salads! You don't need to turn the oven on and your entire dinner can be fixed in minutes!! I have been craving salads nearly every night of the week in this already hot and humid weather.

Salads are light, cool, crisp, and refreshing on a warm summer evenings. They are also packed full of nutrition if you make sure to add lots of fresh vegetables! I made this particular layered salad several weeks ago for a picnic. Michael really enjoyed it, so it will be on our weekly menu rotation soon! My favorite part is the super easy homemade dressing. I was out of my standard packet of Hidden Valley ranch... so we had to make due! Simple and delicious! We'll be "making due" more often!!

Carrie's Simple Strata Salad

4 cups -or- 1 small head green leaf lettuce, rinsed, patted dry and torn into pieces
1 package grape tomatoes, halved -or - 2 fresh tomatoes, chopped
1 cup shredded sharp cheddar cheese, divided
1 cup frozen peas, thawed
3 hard boiled eggs, sliced
1 small yellow squash, sliced and cubed
2 cups cubed fully cooked ham -or- 1 package bacon, cooked and crumbled
1/4 cup chopped red onion (optional -- very pretty!)

Dressing:
1/2 cup mayonnaise (the real stuff folks!!)
1/2 cup low fat sour cream or unflavored yogurt
1 teaspoon dill weed (or more to taste -- I always opt for MORE!)
1/2 teaspoon ground mustard
1/2 teaspoon garlic granules
salt/pepper


Directions:
Place rinsed and dried salad greens in the bottom of a large glass serving bowl. Layer quartered grape tomatoes, 1/2 cup cheese, peas, sliced eggs, sliced squash, ham, and lastly red onions, over the greens.

For the dressing: In a small bowl mix mayonnaise, sour cream or yogurt, dill weed, ground mustard, garlic granules, salt, and pepper. Mix until well blended. Spread evenly over salad. Cover and refrigerate at least an hour (preferably overnight). Right before serving sprinkle with remaining 1/2 cup of cheese. Enjoy!!
