Gluten-Free Book Review: The Everything Guide to Gluten-Free Living



This is another book review I've been meaning to share with you for months! My good friend Jeanine Friesen, creator and author of "The Baking Beauties" a wonderful Canadian gluten-free food blog, has written a brand new book called, "The Everything Guide to Living Gluten-Free."

(...and I know I'm biased, but I'm thrilled this book is published by Adams Media, the publishers I work with as well and who also published my gluten-free slow cooker cookbook!) 

In the very beginning of the book Jeanine states, "...a gluten-free life isn't all about loss and restrictions. It is also about variety and abundance and finding new ways to enjoy your life."  THIS is why I love Jeanine. She believes in being positive and finding the best possible outcome even when you're diagnosed with Celiac disease or gluten sensitivity or a wheat allergy. This book will give you an incredibly positive outlook on life gluten-free.

Complete with chapters on why people go gluten-free, an in-depth look at Celiac disease, and what gluten is and ALL the places it can be found. Jeanine's guide will give you tips and hints for every aspect of going gluten-free. There is an entire chapter on starting a gluten-free diet. How to organize and stock your kitchen gluten-free. December Sanity Challenge 2012 -- A Peaceful Holiday Season

December... a time actually meant for rest, reflection, creativity, and self-care. But is that what you think of when you envision December? I don't. It often can mean a never-ending to-do list. A focus on gifts, gifts, gifts... christmas cards, ornate decorating, doing everything possible to create a picture-perfect Rockwell holiday. And really, it was just a painting. A lovely painting... but it's not what the holidays are all about.

For me, December is a time to reflect on the journey of Christmas. As a Christian, it's a deeply spiritual time of remembering the miracle of Christ's birth. It's also a deeply spiritual time for many, many other religions and beliefs. It's a time to honor our friends & family. It's a time to rest and rejuvenate.

But so often with sparkly lights, weeks and weeks of Holiday sales starting the actual DAY of Thanksgiving now (ironic, no?), and holiday party after holiday party... it's no wonder we can lose sight of the serenity of the season.

Last year was the first year I participated in Cheryl Harris' December Sanity Challenge. It was truly a gift to realize that I didn't have to be a part of the "crazy-ness" of Christmas. That I really could stop worrying about being perfect, measuring up with the absolute "right" (ie.. expensive) gifts, keeping up with friends & relatives spending enormous amounts on gifts and food. The holiday didn't have to be about "keeping up."

So once again I'm accepting this December's Sanity Challenge. I want to enjoy a peaceful, less-stressful Christmas. And you can too.

Cheryl suggests making a few concrete goals for the season. So here are the goals that I want to work towards this December:

  • I will write down three things I am thankful and grateful for every day. 
  • I will enjoy a dessert/sweet treat/baked good only once per day and in a small portion (1 small muffin, 2 small GF cookies, etc...) 
  • I will take a short 15 minute walk outside at least 2 times a week, both for letting go of stress and to encourage myself to exercise more. 
  • To help with our budget this month, I will not buy anything new (used or thrift store items okay) for myself. See Leo Babauta's challenge this week for my inspiration to do this for the remainder of the year... and I would actually like to pursue this in 2013 as well.

Slow Cookin' with Jenni of Spoonful at a Time


I don't know if you've met Jenni yet or not... but she's a new gluten-free blogger in the Triangle area of NC and I think the world of her. 

I had the opportunity to meet Jenni at this year's first Raleigh Gluten-Free Expo. She was representing Triumph Dining (and did a smashing job if I do say so myself, I believe her booth of Triumph Dining books was completely sold out by the end of the day!)

Jenni's keen sense of humor and wicked awesome sense of taste make her a true asset to the gluten-free food blogging community. Jenni loves to share recipes, share gluten-free traveling tips, and write product and restaurant reviews. 

I asked Jenni several months ago if she would like to review my cookbook on her blog and do a giveaway. I was completely thrilled when she agreed. And I truly could not have asked for a more honest and thoughtful reviewer! Jenni tried no less than SIX recipes from my book and shared her successes along with the recipes that didn't turn out quite so well for her... which I LOVED. I'm so glad she was honest in how the recipes worked and what she learned in the process. I really hope it will encourage lots of people to use their slow cookers more often and to see how versatile they can be!

Gluten-Free Food Bloggers in North Carolina


I love North Carolina. I've been a resident since I moved here for college in 1997 1996 (yikes!). It's kind of amazing I've lived here longer than I lived in Virginia growing up.

Over the past 5 years I've noticed a growing number of gluten-free bloggers in North Carolina and I just wanted to highlight them today.

What I love about all these blogs is the HUGE variety of gluten-free cooking, baking, and lifestyles you will encounter. Some are parents, some are college students, some enjoy eating out, others cooking in, some live on the coast, others in the mountains!

Chacha's Gluten-Free Kitchen -- Written by Kathryn M. Chacha's GF Kitchen is a delightful gluten-free food and lifestyle blog based out of Cary, NC. Kathryn (aka Chacha) shares her favorite whole foods recipes, many of which are naturally gluten-free, along with her faith, her family, and finding fantastic local restaurants in the Triangle area, which cater to gluten-free patrons.


GingerLemonGirl -- written by me, Carrie Forbes. Started in 2007. A gluten-free food & lifestyle blog. My writing has morphed over the years and now focuses on healthy gluten-free, dairy-free, and soy-free recipes along with personal musing on holistic self-care. I am inspired by gluten-free foods that treat me well, are super healthy, and of course taste delicious. I live in rural Eastern NC.


The Gluten-Free Dish -- written by Debbie R. This blog focuses on holistic wellness and gluten-free living. As one who has thrived despite living with severe health issues, Debbie shares her journey and what she has learned along the way in the search for healthy, whole living. As a devout, loving, and faithful Christian she also shares her day-to-day life with her husband, two sons, and their happy golden retriever. Debbie lives in the Triangle area of NC.


Gluten-Free Fox -- created by Kristen Campbell and her boyfriend Tyler. Kristen is the founder and creator of Gluten-Free Beauty, a company that creates all natural and healthy gluten free beauty products such as serums and creams for healthy, happy, gluten-free skin. Gluten-Free Fox is a blog and a search engine designed to help you find everything you need gluten-free! Kristen lives in the coastal area of NC.


Gluten-Free Galley -- created and written by Liz Pearce. Liz is a gluten-free baker from Raleigh, NC. Her bakery, "Gluten-Free Galley" has been a huge success and she creates delicious gluten-free baked goods and desserts using whole, fresh, and local ingredients. Liz's baked goods can also be found in several Whole Foods stores in Raleigh and Cary. Liz also provides gluten-free baked goods to a local restaurant, Tribeca Tavern. In her spare time, she's an amazing mom, enjoys paleo-ish cooking, and hanging out with her husband Nathan.


Gluten-Free Kids Rock!  -- written by Nikki Everett. Nikki is one amazing woman who runs some of the best gluten-free and allergen-free expos in the southeast US! Nikki also started a gluten-free support group for people in the Charlotte NC area several years ago when her daughter was diagnosed with celiac disease. This blog shares fantastic gluten-free tips for parents and families of kids with celiac disease.


Gluten-Free Mimi -- Created & written by Melissa Friend. Melissa is a gluten-free baker selling her delicious homemade gluten-free baked goods in the Statesville area of NC. You can also find her on facebook where she shares what's she is baking for the day and when she will be selling and delivering to local stores and farmer's markets in the Piedmont!


Gluten-Free Raleigh -- written by Zach Becker. Zach has been a key advocate for those with celiac disease  in the Triangle since 2008. Hosting numerous fundraisers for the University of Maryland Center for Celiac Research, for kids going to a local gluten-free summer camp, and even for the National Foundation for Celiac Awareness, Zach has worked extremely hard to bring celiac disease to the spotlight in central North Carolina. Though Zach is "semi-retired" as a blogger, he still shares the most up-to-date and accurate information about gluten-free news in the Triangle.


Gluten-Free in NC -- written by Jeff SanGeorge. This website is one of the best resources around for learning where you can eat and shop gluten-free all over North Carolina. The site is comprehensive and is constantly adding information on new gluten-free eateries and grocery stores around the state. Jeff hales from Greensboro, NC and is a passionate advocate for celiac disease awareness. Jeff also leads a gluten-free support group in the Triad.



Gluten Hates Me -- Written by April Marlow. An incredibly fun and lighthearted blog that shares "Marlow's" latest gluten-free kitchen creations, restaurants reviews, gluten-free traveling tips, and her journey through grad school. Marlow hails from Durham, NC.



I'm a Celiac -- written by Pam Jordan. Pam is a full-time celiac mother of three (including a set of twins), works part-time, and is a pastor's wife. Her upbeat blog chronicles her gluten-free journey, shares recipes for her whole family (including some veggie-hating kids!), and includes restaurant and product reviews. Pam's super fun sense of humor shines through on each post. Pam and her family live near Winston-Salem, NC.



Spoonful at a Time -- written by Jenni. Jenni is new to the blogging scene, but has a great website sharing her journey into gluten-free cooking and baking, gluten-free restaurant and product reviews, along with awesome gluten-free organization and blogging tips. Jenni recently shared a guest post highlighting some of the best places to chow down gluten-free style in Raleigh, N.C.




Yum Yum Yum -- written by Erin out of Charlotte, NC. Erin's gluten-free food blog focuses on using healthy, local, and naturally gluten-free ingredients. Erin began her blog in 2007 and has been sharing her simple, delicious, and healthy recipes with North Carolina readers ever since.

{Paleo 101 Books} Sarah Fragoso's Everyday Paleo


This book is where my paleo journey began. When I first pondered the idea of following a paleo diet, Sarah's book "Everyday Paleo" is where I started. I actually contacted the publisher myself because I was so interested in having a copy of the book. They graciously sent me one and I have been in love with this book ever since. I actually talked about the book a little back in October 2011 and the food you see at the top of that post is a skillet meal from Sarah's book

Sarah helped me to learn how carbohydrates didn't have to be the base or main part of a meal. Up until I started "re-learning" how to cook with Everyday Paleo, I was stuck on using pasta, mashed potatoes, bread, etc... as the base of my meals and I didn't know how to change that. Sarah's easy one pot recipes showed me you could use zucchini, acorn squash, or tomatoes as the base of your meal. Proteins are very important on a paleo-type of diet, but Sarah showed me how to make delicious and creative meals with vegetables and proteins. Paleo isn't about just eating meat.

Some of my favorite recipes from Sarah's book are:

  • Spice Rubbed Slow Cooked Chicken (I'm rather fond of anything slow cooker!) 
  • "Breaded" Baked Chicken
  • Better Butter Chicken
  • Everyday Meatloaf (this was hubs favorite - and he liked it even better on the 2nd day!)
  • Puerto Rican Beef
  • Sirloin Dijon (MY FAVORITE! use kale as pasta? Who knew you could do that! I love this dish!)
  • Garlic Beef Stew with Acorn Squash (serious comfort food! I loved this!) 
  • Kids Love Cabbage Slaw (really awesome sweet and sour slaw! Love mango!)
While I haven't cooked my way through the entire book, this is a cookbook that is often on my kitchen counter when I'm trying to find something quick for dinner. Many of the dishes are skillet meals and are easy to prepare. One of the things I like about this book in comparison to other paleo cookbooks is that you can make most of the meals with very simple kitchen equipment such as a good knife and a heavy cast iron skillet. No ice-cream makers. No high-end blenders needed. Keep it simple. Keep it fresh.

December Sanity Challenge -- Self Care Through the Holidays


Last week I shared an introduction on Cheryl Harris' December Sanity Challenge. A challenge to truly take the time for self-care through the holidays, with specific goals.

My goals for this challenge were quite simple. I didn't want to make rigid goals that I knew I couldn't keep through the crazyness of the month.

My goals are:

  • To journal every day, for as little or as long as I needed too
  • Along with (or a part of) journaling, to Pray often
  • To continue following a Paleo Food Plan
My "unofficial" goals were to allow myself to say NO, to not stress over food, to "breathe" when I started to feel overwhelmed (to purposefully take very deep breaths and allow them to physically relax my body), and to recognize and put a name to my feelings when I started to feel stressed (ie... this is bothering me and makes me feel disrespected because I have feelings of Jealousy, Frustration, Loneliness etc... to actually vocalize or write down the WHY behind why I was/am upset.) 

Following Through: 
  • Journaling: I've been a "journaler" on and off most of my life. I have paperback journals starting from when I was 7 years old. Writing soothes me. As we've come to live in a mostly digital age, I've been very hit & miss with my journals. It's hard to carry it around everywhere with me, and since most of my writing takes the form of blog posts or google word documents now, I was determined to find a digital way to start journaling. I did a little research and found a really neat website for PRIVATE journaling called Penzu. The privacy was important to me. When I journal, I was to say whatever is on my mind, work through my thoughts and feelings, and do it with an open mind and heart. I have also used Google documents in the past to journal, but to be honest, it's a very boring way to journal. It isn't pretty. And as silly as it sounds, it's a lot more meaningful to journal, when you can share your feelings on a beautiful surface or with a beautiful instrument. With all of these "requirements" of digital journaling I found a great service called "Penzu.com" -- which allows you to journal privately for free. You can share it with friends if you'd like, but it's primarily meant to be a private journaling space for you to share your thoughts and feelings. If you want to upgrade to a "Pro" account, you can have a "pretty" journal and change the basic settings. I found this service to be a really neat way to encourage my goal of journaling. I have journaled nearly every day since discovering Penzu. It even sends me a reminder in my email to take the time to share my thoughts. 
    • What's gone well? I have discovered that when I'm frustrated or suddenly stressed about something (and it can be hard for me to initially pinpoint WHY I'm stressed) -- by opening up my online journal and just starting to write I can work through my feelings and discover the WHY behind my thoughts and actions. While I haven't journaled every single day, I feel like by making it a priority I have been able to have a much better Holiday season so far! 
  • Prayer: In my own personal spiritual life,  prayer is extremely important to me. Connecting with my Creator on a regular basis helps me to find peace and strength. I haven't done this as often as I would like too, so my goals for the rest of this month are to start each morning with a small prayer using a devotional I have placed next to my bed. The days I have been able to initiate prayer I often write it out in my online journal as well. 
    • What's gone well? When I'm actually journaling my prayers, I feel like they are more concrete. I have a way to look back and see what I was feeling and why. I have to way to see how prayers are answered, how life is progressing, and how good life really is. I'm thankful that with daily journaling I've had a space to share my prayers on a more regular basis.
  • Paleo Food Plan: I have to admit this has probably been the main area in my goals that I haven't followed through with very well. I would say I'm eating Paleo foods probably 80% of the time. Which considering this is my first Holiday season using these food guidelines, that's not too shabby. I hope by next year, I will have a better sense of how to handle the pressures of sugary-carb-filled (even gluten free!) holiday treats and still be able to eat well for my body. I didn't want to be TOO strict in this area, because food and I don't always have a good relationship. I know if I am too strict I will beat myself up which will stress me out and THEN cause me to want to eat EVEN MORE for emotional reasons. So I've found that right now my main meals are all paleo, but I am allowing myself to have holiday treats. I will be more strict with Paleo beginning in January and more importantly after I've finished writing my cookbook. 
    • What's gone well? I think being able to follow Paleo during the Holiday season at LEAST 80% percent of the time has been a very postive and good thing! I haven't baked nearly as much as I have in years past. And the baking I have done has been for a specific reason or for other people. The gluten free baked goods that I have made, have not stayed in my house. I know my body feel so much better with less sugar and refined carbohydrates. Well Fed by Melissa Joulwan {paleo cookbook review & giveaway}


Earlier this week I saw a post on facebook about a new paleo cookbook called "Well Fed.The cookbook (which is available both as an e-book and a printed soft-cover) was written by Melissa Joulwan, author of the blog "The Clothes Make the Girl." I had heard of Melissa's blog before, but didn't realize she was living a paleo lifestyle. This made me excited! I contacted Melissa immediately and asked her if I could possibly have a review copy of her cookbook. Melissa's book was not only gluten free & grain free, legume free, and sugar free... Melissa's book was also dairy free! Some paleo/primal cookbooks allow dairy in their food plan, but as I'm extremely intolerant to dairy, I was thrilled to know this cookbook could indeed feed me well.

I have to say, I'm not sure exactly what I was expecting with Melissa's book... but I sat down and read it completely from cover to cover. This is a BEAUTIFUL cookbook (and I think I'll be putting the soft-cover version on my Amazon wish list!)... Melissa's unique artistic talent shines through on each page through the photography, through the layout of the pictures, and through Melissa's own personal story of cooking with family and love.

You will fall in love with this cookbook. My favorite part of the cookbook is Melissa's technical explanation of how to easily prepare your foods for the whole week in a couple of hours. She shares a wonderful technique called "Hot Plates" which shows you how to make super easy combinations of your favorite proteins, vegetables, fat, and spices to create a fun & different meal each night of the week. I have already referred to her "Hot Plate" ideas for several of our weekly meals! A completely brilliant concept Melissa!

Also included in the book is a whole chapter on recipes for different sauces and seasonings, explaining if you make a few of the sauces (such as her Sunshine sauce, mint chutney, Sri Lankan Curry Sauce etc...) ahead of time, you'll always have a great condiment to really give your homemade meals a truly gourmet touch!

Throughout the book Melissa shows you how to cook and run your home kitchen as efficiently as a  restaurant kitchen. She gives you really helpful tips and ideas on how to make cooking fun, innovative, and something you'll enjoy. And the bonus... every single one of these recipes will make you feel great, energetic, and absolutely well fed!

December Sanity Challenge


Last month, my nutritionist of awesomeness, Cheryl Harris (of Harris Whole Health and Gluten Free Goodness), emailed a handful of gluten free bloggers on Black Friday with the following challenge:

"The challenge—post on what you plan to do to make your holidays sane, happy and healthy.  Make it specific!  Not just “I’ll get more sleep," but “I’ll get at least 7 hours of sleep, 5 days a week”.  Not just “I won’t go crazy making desserts," but “I’ll make a maximum of XX desserts, and space them out over XX time”.  You know what you need to do to keep this doable, and writing it down will help you get there!"


 Cheryl's words really hit home with me. I love the holidays. Absolutely love them... but they are also a challenging time for me emotionally, physically, and sometimes spiritually. There can be a lot of stress and tension with family and friends (both positive and negative). A lot of excess food, parties, gifts, etc... After thinking on these things, I realized that focusing on self-care this month would be crucial for my overall health.

Cheryl started the event with a post on Thursday December 1st. Cheryl focused specifically on getting more movement during the month of December.


Next, Iris Higgins, author of the gluten free food blog The Daily Dietribe shared a post on Thursday December 8th. Her goals revolved around getting adequate exercise everyday and making the time to mediate.



For our 3rd post today (December 15th) Valerie, author of City Life Eats, shared her goals for this very busy month. Valerie centered her post today on goals such as spending less time blogging, more time exercising, and taking restorative yoga classes.





I will be sharing my thoughts for the December Sanity Challenge next Thursday, December 22nd.

My goals will focus on self-care, journaling, prayer, and continuing to follow the Paleo food plan.

Gluten Free Roasted Vegetables -- Guest Post by Carol Fenster

Gluten-Free Roasted Vegetables by Carol Fenster

Many of us are coming down from the Thanksgiving high induced by lots of wonderful foods, some of which are not necessarily healthy but certainly tasted good, didn’t they!  If you’re looking for ideas to introduce some healthier whole food options, I have a solution. Try roasted vegetables.

Roasted does wonderful things for vegetables―as I discovered while writing my latest book, 125 Gluten-Free Vegetarian Recipes. It transforms them―especially those with strong flavors like asparagus or cauliflower―into sweeter, milder versions making them more appealing to non-vegetable eaters. How does this happen? Technically, roasting caramelizes the natural sugars in vegetables and brings out a pleasant nuttiness that simultaneously mellows the flavors as well. Roasting is perfect for hearty winter meals.

This method is especially good for those who prefer whole, rather than processed foods because the actual vegetable remains intact; it isn’t broken down, pulverized, or peeled. Nothing is lost, but a lot is gained in flavor. And, you don’t need to add many other ingredients―simple is better (and easier).

In addition to cauliflower and asparagus, another of my favorite roasted vegetables is Brussels sprouts. They are usually a good buy in winter when they are harvested. They look like miniature heads of cabbage which is not surprising since they belong to the cruciferous family. They grow on a stalk (see photo) which is so large and sturdy that it could probably serve as a weapon.

But we see them in the produce section of grocery stores as little green balls. Look for firm, dense heads and bright green compact leaves. Avoid yellowed heads or any with holes, which could indicate insect damage. Like other members of the cruciferous family, Brussels sprouts are a good source of vitamins, fiber, iron and disease-fighting compounds.

Roasted Brussels Sprouts in Orange-Nut Sauce

Blanching the sprouts briefly in boiling water helps preserve their lovely green color. If you don't have time or don’t mind the loss of color, you can skip Step 2.

1 pound Brussels sprouts
2 tablespoons olive oil
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 tablespoons orange marmalade (or more to taste)
1 tablespoon sherry vinegar
1/4 cup chopped toasted walnuts
  1. Place a rack in the middle of the oven. Preheat the oven to 400 degrees. Line a 9x13-inch baking sheet with parchment paper. Have a medium bowl of water and ice cubes ready.
  2. Bring a large pot of water to a boil. Remove any bruised outer leaves from the Brussels sprouts and cut them in half through the stem end. Cook in boiling water for 3 minutes. Remove from the water with a slotted spoon and immediately submerge in the ice water for 2 minutes to stop the cooking, then blot dry with paper towels.
  3. In a medium bowl, toss the Brussels sprouts with olive oil and arrange on the baking sheet, cut side down. Sprinkle with salt and pepper.
  4. Roast until caramelized, about 25 to 30 minutes. Watch carefully so they don’t burn. Transfer to a serving bowl. Whisk the marmalade and vinegar together and then toss with Brussels sprouts. Sprinkle with the toasted nuts and serve immediately. Serves 4.
Carol’s Tips
  1. Choose Brussels sprouts that are similarly-sized for even roasting.  If yours are all sizes, arrange the smaller heads on one end of the pan and larger ones on the other end. If necessary, remove the smaller heads from the oven first and return the larger ones to finish roasting.
  2. Halving the sprouts makes them roast quicker and more thoroughly.
  3. Discard any loose leaves; they’ll brown too quickly in the oven and probably burn.
  4. To save time, toast the walnuts by sprinkling them around the Brussels sprouts during the final 2 or 3 minutes of roasting.
  5. If you don’t have orange marmalade, use the same amount of orange juice concentrate instead and add a little grated orange zest, if you have it.

{recipe review} heather's oaties


One of my favorite food/healthy living bloggers is Heather of Heather Eats Almond Butter. She likes healthy foods, she thinks butter is a good thing (oh thank you Heather), and she loves her oatbran & oats... just like me!

It's her constant journaling of healthy dinners made of greens, grass-fed beef, and fresh vegetables that inspires me on nights when I can't think of anything to make.

Another thing I love about Heather is her sweet tooth... and how she somehow manages to make dessert recipes with healthy things like rolled oats... and they are AMAZING. These little cookies are a variation of Heather's Butterfied Oaties ( for those who are wondering about the dairy thing -- while I cannot digest most types of dairy -- milk, yogurt, ice-cream, sour cream, etc... I can handle small amounts of buttah and I feel like it's a much better alternative than margarine).


I LOVE these little cookies. I've kept them at work as a snack throughout the day. They are crunchy, buttery, just sweet & salty enough! IT's a great combination and such an awesome way to make a healthy snack. Sure, as all snacks they need to be eaten in moderation... but they are really easy, egg-free, delicious chocolate-y snacks!!

Every now and then you meet someone who really "gets" you. Nicole Hunn is one of those people for me. She's spunky, quirky, has a keen sense of humor, is not afraid of being honest, a beautiful smile, and she knows how to pinch a penny. Nicole's book is packed with recipes like pizza dough, cheese crackers, plain bagels, macaroni and cheese, meat"love", and chicken pot pie. Desserts like yellow cupcakes, chocolate chip cookies, and apple pie.  These are the foods that people like me love, remember, and want again. I just want to make food that will make people happy. I'm really not interested in fancy. I'm not interested in expensive ingredients. I just want to make food that smiles and makes people ask for seconds!

Nicole does that for you. She makes it easy. She goes a step further than even I do, by showing you how to make all these amazing things with one gluten free flour mix. I choose to use a blend of  2/3 whole grains & 1/3 starches simply because that works better for my gluten & sugar intolerant body... but for most gluten free folks these recipes using Nicole's favorite Better Batter flour will be a saving grace.

{Recipe Review} The Gluten Free Homemaker's Zucchini & Sausage


When Linda of The Gluten Free Homemaker posted her recipe for "Zucchini & Sausage" on Monday, I knew I had to make it! (So much for my menu plan this week! lol!) This is the kind of recipe I love. Super simple, one dish, and really it could be a meal all in itself!

I actually didn't change a thing to Linda's recipe (really, I didn't! I promise! lol). I even had fresh basil in the yard that I threw in at the last minute. This recipe makes me wonder why in the world we don't eat sausage for dinner more often. My husband and I both love fresh summer zucchini and the sausage (we buy locally made fresh sausage since we live in a major pork producing area) is just an incredibly flavorful addition.

Honestly, this might be my favorite way to eat zucchini now. We actually had three perfectly sized zucchinis from our backyard garden this year (not surprisingly about the only thing that survived the summer heat and crazy weeds -- I think zucchini plants would survive a nuclear blast... lol)

We served the zucchini & sausage with fresh corn and slices of a beautiful home-grown, vine-ripened tomato from a good friend who has a much greener thumb than I do! lol

Gluten Free Girl's Whole Grain Muffins



I really love Gluten Free Girl. To be honest, before I met her at IFBC 2010 I thought she was a bit of a food snob. One more reason I need to stop judging people before I meet them! :-) I'm so glad I had the opportunity to meet her!  Shauna is a gem. She has an incredible hug and even more incredible heart for people. Her laughter --a joy to hear, her boots red, and her smile is warm & inviting.

I truly enjoy her writing & her blog. One thing I love about reading blogs is that you get to watch as the seasons change, as writers evolve, as their food changes.

Shauna has recently decided to stop using white sugar in their home. She's using more natural choices such as sucanat, date sugar, coconut/palm sugar, etc... She's also using more whole grains and she's cutting gums out of her baked goods.

I absolutely love all of these changes. They cater to my own natural & healthy food choices and I'm excited about the new possibilities in Shauna's baked goods. I'm eagerly awaiting her gluten free yeast bread that doesn't contain gums!

Last night I tried her whole grain muffins.



The muffins don't use xanthan gum or guar gum. The first thing I loved about them! Shauna also uses a 70% whole grains and 30% starches for this recipe. She tells you how to make your own personalized gluten free whole grain mix and then shares a basic recipe template. She wants you to play. She wants you to start thinking off the page.

Recipes are simply the outline, the basic idea of what you can make. It's up to you to make them unique. To use what you have available. To be creative and inspired.

The muffins we made last night used a combination of almond flour, sorghum flour, brown rice flour, quinoa flour (I love the taste of quinoa with cinnamon & raisins!), arrowroot starch, and ground flax seeds.  As Shauna stated, you'll probably never make the same muffins twice! That's certainly the case at our house. For the add in's we used about 1/4 of raisins (which cleaned out my stash of raisins) and a handful of sliced almonds. Apparently my chopped walnuts & pecans have hidden themselves in the freezer beyond my reach.

Since I'm watching my calorie intake I calculated that basically my overall recipe (including the amount of sugar & oil used in the original recipe) had 3693 calories. I was able to make 18 muffins from the batter, which means each muffin had about 205 calories. Overall, not bad! Plus, the health benefits of these whole grain muffins is substantial. I love that our version contained healthy proteins & fats with the almond flour + quinoa flour + ground flax seeds.

To reduce the calories in my next batch, I'll probably use a bit less sugar and replace half the oil with applesauce or pumpkin puree.

I was thrilled when I caught my husband (who generally isn't a huge fan of baked goods) packing 3 muffins in a plastic bag to take to work with him today. As I munched on my muffins for breakfast this morning, I was pleasantly surprised at how moist they were.
