Sprouted for Life: Gluten-Free Flax Bread

Food for Life graciously sent me two loaves of their newest breads to try. I don't accept many pitches for food reviews these days, as I've become rather picky. I want foods that really nourish my body in addition to being gluten-free and soy-free. I also want them to be plant-based, whole foods. I'd prefer as little added oils, sugar, and salt as possible. Which means most packaged products don't fit this criteria.

However, Food for Life has created a brand new line of healthy, hearty GLUTEN-FREE, VEGAN breads that are really good. Now if you're looking for plain white sandwich bread, don't buy this. I doubt this will appeal to children or those who do not enjoy breads with distinct texture. However in my gluten-eating days, I LOVED Ezekiel bread. I've always been a bit hippy dippy... and whole grain, sprouted Ezekiel bread was my favorite. I loved the dense, rich texture and the grainy goodness!

These two new gluten-free, vegan breads from Food for Life are wonderful. They are great toasted or just warmed in a pan or in the microwave.(I'm not sure I'd enjoy them straight from the package -- a bit dry for that).  I have enjoyed toasting two slices and loading them up with veggies and hummus, it makes a delicious sandwich. It's also great toasted and sprinkled with sugar and cinnamon for an evening treat. And the cinnamon raisin variety makes a killer peanut butter & jelly sandwich!

Sprouted for Life: Original 3 Seed Gluten Free Bread

I think one reason I always enjoyed the Ezekiel bread is I felt good about eating it. I felt like I was feeding my body well and enjoying whole and nourishing foods. And that's what I'm enjoying again. Having the convenience of a packaged food, yet also feeling like it's healthy and nourishing my body.

This bread would be excellent for stuffing, for a vegan toast on Sunday mornings, for individual pizzas, etc... I'm going to be asking one of my local stores if they can carry this for me. I'd love to be able to purchase it on a regular basis.

Another nice thing about this loaf, it's a NORMAL sized loaf of bread. It's not tiny, and the slices are actually big enough for a sandwich. Win. Win!

Were you a fan of hearty whole grain breads like Ezekiel before you went gluten-free? Why did you enjoy them? I have a feeling you'd miss them a lot less with this bread in your freezer!

Restaurant Review: zpizza, North Raleigh

It's amazing how far my small town has come in the past 5-6 years as far as having gluten-free resources readily available! Between Harris Teeter, Walmart, Target (and soon ALDI), we have a ton of options for gluten-free baking supplies, mixes, and even bread... However pizza is still a different story.

For pizza, we make a special trip to Raleigh! And that's okay... it makes it a fun outing and something that you really enjoy when you get!

Several years ago Mellow Mushroom was my favorite place to go, but the past few times we've gone the wait has been super long and the parking in downtown Raleigh, is no easy task... so we headed to zpizza instead. There's also a zpizza in downtown Raleigh, but we were trying to get away from the traffic, so we sought out the North Raleigh location instead.



One thing I really love about zpizza is it's focus on whole, natural foods. Not every ingredient is organic, but they have 100% certified organic tomato sauce and non-GMO flours for their pizza. (I'm not sure if the gluten-free pizza is also non-GMO, but the regular crust is.)

The pepperoni is preservative-free and the chicken breast is hormone-free.  The mozzarella is from grass-fed cows and is RBGH-Free, and they offer AWESOME gluten-free and vegan options. NEARLY any pizza on the menu can be made on the gluten-free crust, and they use Daiya vegan cheese, so no soy for those of you who need to be dairy-free and soy-free as well!

I really love this handsome dude! :-) 

I had the Roasted Tomato Pesto Pizza on a gluten-free crust, which I LOVE because the sauce is not tomato-based (and my tummy has tomato issues!) The pizza was AWESOME! I love the crispy thin gluten-free crust, and the pesto was fanstastic. It tasted super fresh and with the fresh basil and mozzarella, it was lip-smackin' good! The pizza had just a handful of fresh cherry tomatoes on top that get caramelized and roasted as it bakes and it was absolutely delicious! Just the right amount of tomato for this nightshade-sensitive gal!

Michael had the All American pizza on a regular crust and was a very happy camper! It's great to go somewhere we both get an option and I still know I can get a safe gluten-free pizza!

Product Review: gardenlites™ Veggie Muffins



Last week I received a big box of gardenlites™ Veggie Muffins to try. I was sent five different varieties (was rather blown away by that! I was expecting maybe 1 box! lol), and Michael and I have tried two of them so far. Since they were individually packaged, we took them with us to work for snacks and/or for breakfast. ALL of the muffins are gluten-free, dairy-free, nut-free and soy-free, and are PACKED full of vegetables! What I really love (in addition to the allergen-free goodness) is that these muffins have 5 grams of fiber EACH, plus 3 grams of protein! 

They are low in sugar and the main ingredient in each muffin is a veggie! So far we have tried the Carrot Berry Muffins and the Blueberry Oat Muffins. Next on my list to try is the Zucchini Chocolate Veggie Muffins! The company doesn't necessary market the products as gluten-free, because they want them to be seen as a healthy baked item for all folks, not just the gluten-free crowd!  

To give you an example of the nutritional info (which you can also EASILY find on the gardenlites website - I love that!), here's what you'll find in the Carrot Berry Muffins, which are so far my favorite variety:

Having these muffins in the freezer the past week has been a nice treat! When I needed a quick breakfast or snack, I grabbed one from the freezer. You can allow them to defrost on the counter or just pop them in the microwave for about 30 seconds to have a warm, "fresh-from-the-oven" tasting muffin!

I love that vegetables are the first ingredient in these gluten-free treats.  It can be pretty easy to incorporate fruits into other foods and baked goods, but vegetables can be a challenge. I think kids would really enjoy these muffins and they would be perfect for lunch boxes.

The muffins are quite moist and have a tender crumb. They are individually wrapped, which makes them very convenient. Also, for those concerned about the environment, they really don't have a lot of extra packaging which I really appreciated.
 
The gardenlites website is extremely consumer-friendly and easy to navigate and you can easily find where to purchase gardenlites products, along with ALL the ingredient and nutritional info for each product they carry (simply click on each product!). I really appreciate that they make it so easy for a consumer to find their information. I feel like when companies are proud of the products they carry, they are open and completely transparent about sharing their information.

These are muffins I would definitely purchase when they become available in my area!

Product Review: Cook Simple's Cowboy Chili Meal (Gluten-Free, Dairy-Free, Non-GMO)



I feel like I can hear the sound of the dinner bell at the chuckwagon ringing away with this review! I was first introduced to Cook Simple's Cowboy Chili last year when I received a box in a Taste Guru monthly box. I tried it and really enjoyed it. It was a simple healthy chili that could be made in about 20 minutes for a quick, healthy, and easily gluten-free dinner!

I've bought this boxed meal several times since, and I'm always amazed at the quality of the meal and how healthy it is for a boxed mix. The box comes with directions on the pack and a packaged mix of dried beans, spices, and vegetables. You add a can of diced tomatoes, 1 pound browned ground beef, and 2 1/2 cups of water and voila... dinner 20-30 minutes later! You could easily make it vegetarian by using another can of beans or garbanzos in place of the ground beef (I actually added some leftover garbanzo beans I had in the fridge last night!), and it's already dairy-free... which is rare option for packaged gluten-free foods.

And because I'm sensitive to a lot of tomatoes (I can handle small amounts) I actually use canned pumpkin puree or sweet potato puree instead of the tomatoes... you can't tell the difference! (And bonus fiber! woohoo!) As you will see below, for such a great tasting dish the ingredient list is very small and mainly consists of dried vegetables and beans!

  • Calories: 140 per serving (as packaged, with 1/4 pound 85% lean ground beef = 384 cals total)

New Gluten-Free Products at ALDI Grocery Stores


I first visited an ALDI grocery store after I had graduated from college and was living in my tiny little first apartment. It was perfect for me because I was BROKE and I needed affordable groceries. I lived off canned and boxed foods at the time and ALDI was a perfect fit. Tons of cans of vegetables for less than .40 a can, I made a lot of vegetable soups and had lots of canned fruits along with rice, pasta, and even fresh veggies for incredibly good prices. ALDI was a lifesaver for me, especially when my budget incredibly limited before I was married.

I stopped frequently shopping at ALDI when I went gluten-free in 2007 mainly because they didn't offer many gluten-free items other than naturally gluten-free foods.

HOWEVER, I found out this week that for a LIMITED time ALDI will now be selling an incredibly diverse line of gluten-free products. The supply is limited and you should probably run out and grab these items before they are gone. IF you really enjoy the products, PLEASE PLEASE PLEASE go to ALDI'S website and leave them a message saying you'd LOVE to have these products available ALL the time. I get the feeling that many of these products are name brands we pay big bucks for in a regular grocery store.

Over the next two weeks I hope to test out these products I picked up on Monday night to let you know what I think of them and how they worked out. If you try any of the products I didn't pick up (like the dessert baking mixes or the frozen products, I'd LOVE to know what you think of them! PLEASE send me an email or a comment on this post to let me know what you tried and what you thought of it!

THE BEST thing about these great products SO FAR, quite simply is the GREAT prices (and the fact, I'm pretty sure they are name-brand items just re-branded by ALDI.) Below I've listed what I paid for each product. These products are at least half the price if not 1/3 less expensive than what you would pay in any other grocery store for gluten-free products.

Product Review: Cybele's FREE-to-EAT Oatmeal Raisin Gluten-Free Cookies



I bought a box of these cookies at my local Food Lion grocery store a few weeks ago. I bought it on a shopping trip to replenish my desk drawer at work. I always try to keep a few gluten-free options in my desk for that inevitable 3 pm snack attack!

I was excited to find Cybele's cookies in my local grocery store. We don't exactly live in a gluten-free abundant area, so whenever I find a new snack that fits my dietary criteria it's fun to give it a try.

My first thought about these cookies was the box was quite small (which really isn't that unusual for gluten-free baked goods). It has about 12-13 cookies in it and suggests 2 cookies per serving. The box of cookies cost $4.59, which in my experience really isn't too bad a price for gluten-free products. This means the cookies were about .38 a piece.

Ingredients:  Gluten-Free Oats, Raisins, Brown Sugar, Organic Palm Oil Shortening, Gluten-Free Flour (Brown Rice Flour, Potato Starch, Tapioca Flour), Evaporated Cane Juice, Water, Fructose, Golden Flaxseed, Brown Rice Syrup, Grap Juice, Rice Dextrin, Vanilla Extract, Baking Soda, Xanthan Gum, Sea Salt, Sunflower Lecithin, Cinnamon.


I have to tell you that when I tried the cookies, I wasn't sure what to expect. MOST packaged gluten-free cookies are very hard and crisp... which generally I don't mind. I like a crisp texture now more than I did in my pre-gf days... however it's nice to find a soft cookie.

THESE cookies were truly fabulous! 

They were soft and chewy! The texture was really good for a packaged cookie! The cookies were perfectly moist and the raisins, big and delicious. I felt like the company didn't skimp out on the fruit, which was nice. You had a bite of raisin with nearly every bite! You can taste just a hint of cinnamon in each cookie and they were definitely sweet, but not overly sweet.

I love that Cybele created this recipe using oats and flaxseed, along with being dairy-free AND egg-free! Quite a feat for a GOOD gluten-free cookie! These cookies are ideal for kids with food allergies because they are "top 8" free, so no peanuts, dairy, eggs, wheat, soy, tree nuts, fish, or shellfish. SO a great option to take to school functions and for weekly lunches! They are also baked in a dedicated gluten-free facility so you can rest assured they are free from cross-contamination!

If you wanted too, I think you could easily microwave the cookies for about 5 seconds to give them a warm, "fresh - out - of - the - oven" flavor.

They were really pretty cookies and they looked homemade, not like a store-bought cookie.

I will definitely buy these cookies again, I think they would be great to have at home in the back of the cabinet for a time when you have unexpected company and need a nice dessert!

A Gluten-Free Dinner at PDQ in Raleigh, NC


One of the nice things about being a food blogger is getting the inside scoop to new restaurants and shops in the Raleigh area! Last week I received an email inviting me to attend a blogger's dinner at a new "fast food" restaurant in Raleigh called PDQ. Admittedly I was a bit skeptical because I had no idea what to expect or what was going to happen when I got there. Was it going to be an all day sales pitch? Were they going to wrangle us into buying something? Was the food really going to be any good.... let alone something safely gluten-free that I could even eat? Would we be forced into signing a contract to write a blog post? (Thankfully NONE of those things happened! lol)

I really wasn't sure... but it was a free meal and Michael thought it would be fun, so we decided to take an afternoon trip to Raleigh to check it out. It was a beautiful Sunday afternoon. When we drove into the shopping center where the Raleigh PDQ is located on Falls of Neuse Rd., we were greeted to a beautifully landscaped parking lot and then a game of cornhole on the sidewalk. What a great way to welcome kids!! And we actually had fun playing a few rounds too since we were early!


Next up we saw that the restaurant listed it's operating director, boldly and proudly on the front door. This was kind of cool to me, because it seemed to signify that this was much more than your average fast food restaurant. It turns out, it was Amy herself who greeted us when we got to the restaurant.


The dining room has an open view of the kitchen and a smaller, more cozy room that's full of windows and sunlight. This smaller room can be reserved for special events and parties.  Every table has this cool branding!




When we first got to the restaurant Amy greeted us and welcomed us into the small room. She stated that PDQ (other than standing for pretty dang quick), also meant People Dedicated to Quality. While waiting for the other bloggers to arrive for the early dinner, we were given information sheets and Amy just casually told us about the restaurant's history and how they focused on a small menu with fresh ingredients. Once all the bloggers arrived we were all going to get to have a tour through the restaurant and the kitchen and preparation areas.

One thing I was immediately impressed with was the cleanliness of the restaurant and how open they were about everything. You could see every aspect of the kitchen and prep area. This restaurant has no freezers or microwaves, all food is prepared fresh and they have a unique way to prep foods so they are put together quickly for your meal.


This is the open, main dining area of the PDQ in Raleigh. You'll see lots of different tables and the basic menus in front of each cashier. I really loved how basic the menu was and how easy it was to see in front of each cashier. The cashiers were also extremely knowledgeable when we asked them questions about the menu items.


Amy is in the white chef's coat below as she began our tour. All managers at PDQ wear chef's coats and are easy to locate. They have many duties in each restaurant, including expediting the food as it goes out of the kitchen. I liked that they wore the coats. I felt like they were proud of their position and they enjoyed their jobs.

The restaurant usually has 1-2 seasonal special meals in addition to their regular menu. You will generally see the seasonal specials listed on the large colorful boards on the way to the cashier.  Amy was extremely friendly and fun to talk too. You could tell she really loved this restaurant and what they stood for (fresh, healthy, quality food, that's delivered quickly!)


Along with fresh-brewed teas (often brewed twice a day!), and traditional sodas, the restaurant also serves homemade lemonade along with their favorite soda beverage of choice: CHEERWINE! Good ol' Cheerwine! (If you're from NC and love your cheerwine raise your hand! lol)


One of the really neat things about PDQ was the hand washing station next to the restrooms. It's at a great height for kids who are more interested in getting their yummy food than going to the potty! The kids who were visiting loved this hand washing fountain! I thought it was pretty cool too!


At the beginning of the kitchen tour Amy showed us that all of the sauces in the restaurant are made fresh every single day without any preservatives. All sauces that go out to customers are served in individual containers to prevent cross-contamination and to have a neat presentation.

Notice the blue" order in the square on the tv above Amy's head below. This means that the customer has just placed the order, so the prep staff IMMEDIATELY start to put together your order as soon as they see it hit the screen. This means while you're paying for your meal, your order is already being quickly, yet carefully put together.


I wish I had gotten this young man's name, but he gave us the rest of the tour through the kitchen. He was incredibly knowledgeable about preventing cross-contamination and about the gluten-free menu items. Such as, he made sure to let me know that the buns for burgers are warmed in a separate warmer and not on the grill, where the grilled chicken and turkey is cooked (so no cross-contamination there!) The restaurant's specialty is freshly breaded and fried chicken tenders, along with grilled chicken tenders. The kitchen makes a certain amount of those tenders are made so your meal can be put together quickly, however those precooked foods, have NOT been sitting there for hours, they are all on specific timers.


FRIES! The fresh-cut fries are a something PDQ is EXTREMELY proud of! They do not use frozen products at all, so all of their fries are handcut, steam-baked, and then fried. Again, they are not made hours ahead of time, so all the food you get is VERY fresh! Whenever they open a new box of fresh potatoes, the potatoes are specifically tested for the glucose count, if the glucose count is over 3 (on their measuring instrument), they are returned and not used for fries. The glucose count is very important to having a crispy fry with a great texture. The potatoes are pressed and cut with a machine in the store, and then washed 3 times to remove dirt and any extra starch. They are then steam-baked and only fried once in soybean oil.

Their fries are prepped and made fresh EVERY SINGLE DAY! Here in the picture below you can see them coming out of the oven after being steam-baked. They steam-bake the fries first, so that they are only fried once. This gives the fries a super fresh "baked potato" flavor and they are a huge hit at the restaurant!



NO FREEZERS! Another big selling point for PDQ is that they do not have a freezer. Not even a little one. Their "fast" food is extremely fresh. All produce comes to the restaurant 3 times a week. All proteins are shipped to the restaurant 2 times a week. And PDQ receives fresh baked bread from a bakery in Georgia 5 days a week! Chances are, if you're someone who can eat gluten, the bread on your sandwich was baked that very day or the day before!

Salad lettuce is kept fresh every single day by being rinsed in ice-water and kept on ice until serving, so salads are super fresh along with their lettuce-wrapped sandwiches (which are delicious!






I was incredibly impressed with the amount of gluten-free items that were available at PDQ! I honestly only thought I was going to be able to get a salad before I went to the restaurant. After visiting and seeing the kitchen preparation area and the way they prep their potatoes, I was so excited! I could have a lettuce wrapped sandwich, salads, EVEN the fries! They are all made in a dedicated fryer (although, as with all restaurants, you may want to check with the manager individually at your location), but I could eat just about everything on the menu, minus the buns on a sandwich or fried chicken tenders! Despite the small menu, I still had a LOT of options!  (I do hope the company will make their allergen menu more easily available on their website soon, so it's easier for folks to find! ) 

I chose the grilled turkey sandwich since I'm a big fan of all things turkey, cranberry, and Thanksgiving! Here's what's on it: "Hand-held Thanksgiving" served on an egg bun (or a lettuce wrap) with traditional spices, seasoned mayo, lettuce and cranberry.

It was absolutely delicious! Actually I've been trying to think of ways I could re-create that sandwich at home this week! I really loved it! The mayo had sage and other savory Thanksgiving spices and it paired perfectly with the cranberry sauce and the juicy turkey breast! It was really good! And the fries? Oh goodness... they were really delicious! Super crispy, super potatoey, just perfect!!


Michael had one of the Cripsy Chicken Sandwich which had mayo, lettuce, tomato and pickles and he said it was just as good, if not better than his favorite sandwich at our favorite chicken sandwich restaurant! (you know... the one with those amazing waffle fries! lol) He was really impressed and truly enjoyed the sandwich! He said the homemade breading was great and the chicken was very moist. He also completely devoured the fries!



Once everyone was seated and enjoying their free meal Amy sent around samples of other menu items such as the homemade Blueberry Coleslaw... not too sweet and really popped with blueberries! It was very fresh and summery!


Another fun side we had the chance to try was the fresh green apple slices with homemade toffee dip. I love that both of these sides were naturally gluten-free and they were really great. The apples and dip would be SUCH a great snack in the afternoons at my job! I wonder if I could suggest this to the cafeteria in my building!  The toffee dip was really delicious, yet not too sweet or sugary! It was just right and went really well with the tart apples!


Other great items we tasted were the freshly made lemonade, the vanilla milkshakes, and the peanut butter & chocolate milkshakes, which are also made fresh right as you order them! The milkshakes are worth the trip alone! YUM!

I honestly cannot tell you how impressed I was with this restaurant. The employees were extremely friendly and just seemed to really enjoy their jobs. The food was fantastic and you just felt good about eating it. You felt like your meal was healthy and made from real foods and it was so much more than "just a fast food" experience! This restaurant could change the standards of "fast food."

Review: Gluten-Free Mimi's Whole Grain Muffin Mix


I met Melissa Friend (AKA Gluten-Free Mimi) several years ago at a gluten-free expo in Raleigh, NC. She had just started selling her gluten-free baked goods to local coffee shops and through direct order. She came by my booth, introduced herself and I was immediately drawn to her. Melissa had such a kind and thoughtful demeanor. We talked about our local gluten-free support groups and our favorite gluten-free things we enjoyed baking.

Several years later Melissa decided to change her business model when her husband was told he needed to eat a lower glycemic diet to stay healthy. She went back to the kitchen and re-worked her favorite muffin recipe to make it both gluten-free, dairy-free, soy-free, whole grain, AND gum-free (no xanthan gum or guar gum! Do you know how hard that is to find in a baking mix??). She also began experimenting with paleo recipes and creating a paleo "bun" mix, again free of gluten, dairy, and soy.



After many trials Melissa finally created two mixes that she felt could be game-changers. A gluten-free, whole-grain muffin mix, and an easy paleo bun mix.

I had been following Melissa for quite a while on facebook and when her business page hit 200 "likes" I won a bag of her gluten-free, whole grain baking mix. I couldn't wait to try it!

I seem to go through "muffin" spells... I won't bake them for months and then out of nowhere I'll make them for weeks on end and not get tired of them! I love muffins because they are easy, in perfect portions, and and I've always been someone who preferred the cake to the frosting, so muffins are sort of healthy cake in disguise right?

Well with this gluten-free baking mix, they definitely are!


The instructions are super simple! Simply add: 2 eggs, 1/4 cup oil, 1/4 cup applesauce, and 1 cup pumpkin puree to the dry ingredients. Scoop the batter into a paper-lined muffin pan and bake at 350 degrees for 35-40 minutes. This mix makes 12 good-size muffins (and could easily make 24 mini-muffins, if you would prefer!)

I knew immediately that the mix would be versatile. Since there are no added flavorings or spices, you can customize these muffins with the ingredients you have on hand!

  • Want banana nut muffins? Use 1 cup of mashed bananas instead of pumpkin puree and add 1/2 cup chopped walnuts. 
  • Want chocolate chip muffins? Stir in 1/2 cup mini chocolate chips and 1 tablespoon of vanilla extract to the batter. 
  • Want lemon blueberry muffins? Stir in 1/2 cup frozen or fresh blueberries and 1 tablespoon fresh lemon zest into the batter. 
  • Want zucchini spice muffins? (Great way to use up too many zucchini!) Substitute 1 cup freshly shredded zucchini in place of the pumpkin puree. Add 1/2 teaspoon pumpkin pie spice and 2 tablespoons water to the batter. 


When I decided to make the muffins I had two super ripe bananas that needed to be used. So I used the bananas in place of the pumpkin puree and then added about 1/4 cup sliced almonds and 1/4 cup mini chocolate chips to the batter. Then I baked as directed. Easy peasy!

Michael loved the banana chocolate chip muffins and we love the crunch that sliced almonds add to baked goods.

I would highly recommend using this easy gluten-free baking mix from Gluten-Free Mimi. It's very hard to find gluten-free mixes that are not primarily made from high glycemic starches such as white rice flour, potato starch, and tapioca starch. I love that this mix contains buckwheat flour, millet flour, and even teff flour! These wonderful dense grains almost give these muffins a delicious "bran" flavor! Yet they are "light" enough to even please picky palates (such as my husbands!) I also just LOVE that Melissa does not include "gums" in this mix. For those who are sensitive to guar gum or xanthan gum, this mix is just for you! (Melissa uses flax seeds to help give these lovlies their wonderful texture, instead of the gums!)

Review: Pillsbury Gluten-Free Chocolate Chip Cookie Dough


Pillsbury contacted me several weeks ago about working with their new promotional campaign for their brand new line of gluten-free baking doughs. To be honest, at first I was slightly hesitant. I know many of my readers prefer to make things from scratch. And generally I do too... 

BUT the longer I've been gluten-free, I've realized the more I long for shortcuts. Not all the time, but for those times when company's coming over unexpectedly, or when you just want a chocolate chip cookie! Shortcuts can be really helpful and when you're gluten-free they are not always readily available. So I agreed to participate in the paid campaign. This is my first compensated review and I can tell you, that no matter what I agree to review, the food will be reviewed with utmost honesty and integrity.

So last week I received the 3 Pillsbury gluten-free doughs in the mail.  It's been a busy week and I wasn't sure when I was going to get a chance to try them. If you've been reading this blog very long you know my husband Michael loves chocolate chip cookies. Today I thought I'd give them a whirl.

The first thing I noticed when I opened the plastic container of dough is how much it actually looked like MY cookie dough! Same color, similar consistency. I do recommend taking the dough out of the fridge and allowing it to come to room temperature before baking. It's much easier to handle that way.


The dough was very easy to work with and we got right around 2 dozen small cookies (about 1 - 1 1/2 tablespoons of dough per cookie). We baked them for around 11 minutes and allowed them to cool on the parchment paper for several minutes before trying them.

Really, I was skeptical. I honestly didn't expect these cookies to be ANYWHERE near as good as my homemade cookies. But in spite of my reservations, I really liked them. I mean I really liked them! I went back and looked at the ingredients and told Michael that I thought they must have borrowed MY gluten-free cookie recipe! The cookies are really good. Michael really liked them too (although he would NOT say they were better than mine... I think he was just being nice though! lol)

The cookies end up being a bit more greasy than the cookies made from my homemade dough, but I absolutely would not hesitate going out and buying this Pillsbury gluten-free chocolate chip cookie dough.


Charlie was really intrigued by the aroma of the cookies as they came out of the oven... I had to stop him from climbing on the table a few times.

Ingredients: Brown Sugar, Rice Flour, Semisweet Chocolate Chips (sugar, chocolate liquor, cocoa butter, soy lecithin, natural flavor), Water, Palm Oil, Canola Oil, Sugar, Corn Starch, Modified Potato Starch, Contains 2% or Less of: Eggs, Modified Tapioca Starch, Salt, Baking Soda, Xanthan Gum, Natural Flavor.

CONTAINS: EGG AND SOY; MAY CONTAIN MILK INGREDIENTS.

So overall, I'm really impressed with these cookies. They are crispy on the outside and chewy in the middle. They are soft and have a chewy crumb. They were honestly much better than I thought they would be. And I kinda hate to admit they were just about as good as my homemade version. A neighbor stopped by to drop off a dish while these cookies were baking and she loved them too. She even took a few home with her... and she's not even gluten-free!

Pros:
  • Easy to make, you don't have to add ANY additional ingredients
  • Resealable container, which makes the dough easy to save for later, you can easily just make a few at time, if desired. 
  • Tastes great! DOES NOT "taste" gluten-free!
  • Would be great for parents to make with kids, super easy to assemble and bake. 
  • Perfect for travel or to make when visiting friends or family. Easy to suggest to friends & family to have for you when you come to visit. 
Cons:
  • A bit more greasy than homemade gluten-free chocolate chip cookies
  • High sugar/starch/calorie content -- but this is generally the case with just about any gluten-free processed sweet treat
