this week's menu - grain free/paleo meals

I've been trying to make more grain-free main meals, but sometimes it's been hard to find new ideas. I'd love to know your favorite non-grain based gluten free meal ideas! Over the weekend I made homemade amish apple butter in the slow cooker (for the cookbook!)... along with a delicious vegetable beef stew with big 'ol southern lima beans.

I'm also tempted to make a batch of this fish stew from Simply Recipes for lunches and/or additional breakfasts this week. My husband is not a fan of anything with fish, but I love it!

  • Monday -- Sauteed zucchini with chicken with olives and tomatoes 
  • Tuesday -- Slow cooker roast beef with root vegetables
  • Wednesday -- Leftover vegetable beef soup
  • Thursday -- Cheryl's Nightshade Stew  (this is so easy and delicious, it's become a nearly weekly staple!) made with ground turkey
  • Friday -- Ham and "cheese" omelets with kale or spinach
  • Saturday -- Skillet (leftover) beef & broccoli with baked sweet potatoes

Lunch is leftovers, along with 3 prepared meals made from italian turkey sausage slow cooked with diced tomatoes, green beans, and italian seasoning.

Breakfast is chocolate hemp shakes, baked egg cups (this is SO much easier than peeling boiled eggs! We "lined" the muffins with sandwich turkey, and used daiya cheese!), and lemon poppyseed almond flour muffins.

  1. Today, I'm simmering lamb shanks in the crock pot with vegetables, can't wait for dinner. I'm a gravy fan, so I've started deducing the juices in the pan, or in this case pot, instead of adding thickeners. Almond flour and coconut flour also work to thicken a sauce or gravy, of course, and sometimes I use those.

  2. oh wow! that sounds delicious pamela!! I'm a big gravy fan too! I haven't really developed a taste for lamb (other than the roast leg of lamb my dad always prepared at christmas) but yours sounds so good and you are right! simply by cooking down the liquids creates a delicious heavily flavored gravy!!

  3. We've been transitioning to a paleo diet for the past few weeks - and have been huge helps for more recipe ideas! I'm also following every paleo blog I can find. Almost all of them seem to post recipes at least once in a while.

    Also, I second checking out When I get in a rut I go there. :) A lot of Thai food (curries, soups) can be made paleo. Make cauliflower "rice" and do that with Thai, Indian, and Chinese cuisine too. Or Mexican. If I vary the flavors of my cooking I have less of a chance of getting bored!

    This week I'm making tom kha soup (coconut based) with chicken, making meatballs, and, umm... trying to eat my way through our CSA box before the next pick-up. Breakfasts are going to be poached or fried eggs on sauteed greens, since we probably have 5 lbs to go through before the weekend.

  5. The baked egg cups are pretty intriguing. I've never seen anything like it. And I'm delighted you're enjoying the stew!

  6. I like to make "spaghetti" with thinly sliced zucchini for spaghetti noodles for a quick dinner. It's really quick. You could make some meatballs and keep them in the freezer to go with it for dinner emergencies.

    I also just made lasagna with zucchini "noodles."

  7. I live with someone who has Type 2 diabetes whose blood sugar reacts more violently to grains than starchy vegetables. So we rarely have grains with meals but potatoes, sweet potatoes, kohlrabi, carrots, rutabagas, turnips, and winter squashes of all types show up regularly on our plates. I also use spaghetti squash as a substitute for pasta. Would any of these work for you? I also frequently mix whatever starchy vegetable I'm using with eggplant, zucchini, and summer squash.
