This Week's Menu (Nov. 12th - Nov. 16th)

Meet Moe... our betta fish.
He was rather cranky right before this picture because Michael was holding Freddie the hamster,
and Moe doesn't like hamsters.

Menus from now through New Year's will not be "spectaculous!"
(I know that's not a word, but I like the way it sounds!)

As we're trying to figure out what we're cooking for the holidays, sticking to a frugal budget (which isn't always easy living gluten-free), and getting creative with Christmas presents... our weekly menu will probably be set on the back burner for a while!

I will continue to have a menu plan because:

1st) I like having a set plan to fall back on (even if I don't follow it exactly)...

2nd) Michael likes knowing that he can click on my blog to see what we're having for dinner on any given night -and-

3rd) It keeps me somewhat organized during the horrendously crazy upcoming holiday season!!

  4. Yea! You're making my bread. If you're making it in a bread machine, I should tell you that I created this recipe after I lost the mixing blade for our machine. So you may want mix up the batter before you put it in and not use the blade.

What is Betty's Chopped Salad? I need more salad ideas. Mine are getting a bit boring!

  5. Sally -- Thanks girl!! Your menu looks awesome! You're much more daring than I am!!

Kate -- Thanks chicadee! Shortbread... *sigh* if it just didn't have so much butter! I'm trying to cut back on the butter... if you have any good suggestions let me know!

KBabe1968 -- Planning ahead is great... following it is even better (LOL I'm not always very good at the latter!)

Mary Frances -- Thanks for the tip! I usually do something similar: I try to help the machine along as it's mixing (I just can't leave the poor thing alone!) I'm looking forward to trying your bread! Wanted to try something different from my usual 5 flour version...

OHH... Betty's chopped salad is simply a salad of fresh EXTREMELY finely chopped vegetables such as green pepper, celery, mushrooms, carrots, boiled egg or two, plus a nice mix of salad greens (I love butter lettuce personally). All the FINELY chopped vegetables make the salad very palatable (AKA Michael loves it and this guy isn't too fond of veggies!) and I usually make a red wine vinaigrette to toss the salad in! Pine nuts and pomegranate seeds also make this lovely!! I should really post this now that I think about it! LOL
