This Week's Menu

Gluten Free Menu Swap Monday

The ingredient of the week is almonds! I chose almonds because I always think of almonds at Easter! As a child I often received Jordan Almonds in my Easter basket! Chocolate covered almonds are a favorite as well!

In my kitchen I like adding raw sliced almonds to vegetables like green beans when cooking! The almonds give the vegetables a very unique flavor and a wonderful crunch! I'll be making green beans with almonds this week! I'm also looking forward to trying Natalie's Almond Honey Yeast Bread!

Almonds and most nuts are easy to store and have a long shelf life. I love having almonds, pecans, and walnuts in my freezer to use any time I need them when cooking!

*Karen, from Gluten Free Sox Fan has her menu up for the week! She said it wasn't very exciting, but Eggplant Lasagna and Feta Topped Chicken with veggies sounds pretty exciting and delicious to me!! I think weeks we get creative with what we have in the pantry can be some of the best menus we have! Thanks Karen!!

I have to admit, after such an extremely busy Easter weekend, I was reluctant to plan a menu this week!! But I know from previous experience, just having a basic menu plan (even if it's only simple foods) for the week will help me to be stress-free later!! And it also helps me to know what ingredients we have on hand!!
