Basic Gluten Free Pancakes for National Pancake Day


One of my fondest memories growing up was eating my Dad's pancakes on Saturday mornings. He learned how to make pancakes when he was 8 years old. My grandmother taught him so he could make his own breakfast because he enjoyed sleeping late. (So that's where I get that from!) Dad's still making these pancakes and they have always been my favorite.

I've made a lot of gluten free pancakes since August 2007. I've enjoyed nearly every recipe I've made. But it's been a long time since I had my Dad's pancakes.

Most of the gluten free pancakes I've made have been from a mix. My favorites have been from this homemade gluten free master baking mix, and from Bob's Red Mill.

But I wanted to make my Dad's pancakes. His pancakes were slightly thin, but fluffy, soft, and completely mouth watering!

Somehow in the past three years I never thought to simply take my Dad's recipe and adapt it to be gluten free. This week I decided to do just that.

Michael's first comments after biting into my Dad's recipe for (now gluten free) pancakes: "Honey, these are the best pancakes you've made yet. Who's recipe is this? This is EXACTLY what pancakes are supposed to taste like. These are fluffy, buttery, moist, and they make me smile."

Not sure where the buttery part came in since we don't use butter... but I really love my husband!



If you want a very simple and basic gluten free pancake recipe, this is it. It uses 2 gluten free flours that are most likely in your pantry right now. No xanthan gum. No mix needed. Make these for your family this saturday morning and start a delicious tradition... or have them for dinner like we did tonight! :-)


Dad's Best Pancakes (Made Gluten Free)
-Or- Basic Gluten Free Pancakes

(Free of gluten, casien, and soy)


Dry Ingredients
3/4 cup brown rice flour
1/2 cup tapioca starch
1 1/2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt

Wet Ingredients
1 teaspoon vanilla
1 egg
1 cup non-dairy milk (I used almond milk)
1 tablespoon canola or grapeseed oil

Directions:
In a medium sized bowl add all dry ingredients and whisk together thoroughly. Make a well in the center of the dry ingredients and add the vanilla, an egg, 1 cup of non-dairy milk, and the oil. Whisk wet ingredients together with dry ingredients until thoroughly mixed. You will have a very wet, but slightly thick batter that will cling to the whisk. Brush skillet or non-stick pan with olive oil or non-stick spray. Heat pan on medium high heat until it's hot enough to make a drop of water sizzle. Pour a few tablespoons - 1/4 cup of batter per pancake. Cook until bubbles form on the top and pop and the edges are slightly dry. Flip and cook the opposite side for 1-2 minutes. Serve piping hot with casein free margarine or ghee and real maple syrup!

Go Ahead Honey, It's Gluten Free - June 2008 Roundup

This month's theme was for one pot/pan meals. Kid-friendly if at all possible! I love quick, easy, one-pot dinners! We have a great group of folks who contributed this month! Thank you to everyone for participating and if I accidentally left anyone out, please email me ASAP, and I'll add you to the roundup!!



1. Gluten Free Kay
Kay was on the ball and entered early in the month! She made a delicious entry of homemade gluten free Shepard's Pie. This is one of my all-time favorite meals! I cannot wait to try Kay's version!






2. Rachel @ The Crispy Cook
Rachel at (formerly Wheat Free Meat free) The Crispy Cook, came up with an amazing one pot meal of spinach risotto! Risotto is one of those dishes I'm still trying to perfect and Rachel's looks amazing!! All I can say is WHERE is mine??






3. Johanna @ Green Gourmet Giraffe
One of the fun things about blogging is meeting people all over the world. Johanna hails from Australia, where recently she celebrated winter solstice, so one-pot meals of soups and stews are abundant! Johanna's dark stew looks mighty tasty! I love all the interesting ingredients she included in this stew!






4. Deliciously Gluten Free
Vittoria joined us this month with a one pot meal of tilapia! She included great pictures showing the process of how this yummy meal is made! Vittoria made this meal for her boyfriend who is a personal trainer. I love fish and I cannot wait to try out this meal!






5. Lauren from Celiac Teen
Have you ever seen a more beautiful red soup? Lauren joined us for the first time this month with her contribution of a roasted red pepper soup! Lauren included great "how-to" steps in making this soup, including roasting the peppers herself! Seriously impressive Lauren!






6. Sea @ Book of Yum
Sea has outdone herself again! She posted TWO amazingly delicious one-pot meals! The first is meal is a vegan cauliflower pie! I am always looking for new ways to use cauliflower and I cannot wait to try this!





The second meal Sea posted is another beautiful cauliflower dish with cheese in a hashbrown crust! I love Sea's creativity with gluten free crusts! This is another must try!







7. Cheryl @ Gluten Free Goodness
Cheryl joined in with her recipe for a lovely nightshade stew! A medley of tomatoes, chicken, green peppers, and fresh herbs make this dish. I love Cheryl's addition of serving avocado slices along with this delicious stew! Enjoy!







8. Chef Penny @ Lovin' Gluten & Casein Free
Penny joined us with gusto for the first time this month, with not only one, but two delicious one pot meals! Penny's first dish is a great naturally gluten free, frugal dinner using up leftover turkey and wonderful rice!



Penny's second dish is for a one-pot meal of ham and potatoes (one of my favorite combinations!) She once again does a fantastic job of frugally using up gluten free leftovers!







9. Gluten Free in the Greens
Kara participated for the first time this month with her one-pot meal "Tamale Pie." I had to giggle when I saw her post because this was originally the dish I chose to make for the event! But Kara's recipe is unique because she uses ground buffalo, cocoa powder, and a generous pinch of cinnamon! If I ever find ground buffalo for sale here, I have to try this recipe!





10. Ginger from Gluten Free in GA and FL
Ginger whipped up a fresh Greek pasta salad with yummy farmfresh veggies! Ginger wasn't able to get a picture of the salad, but if anyone makes it and takes a pic, please let me know so I can post it here! Sounds like a really wonderful one-dish salad meal!





11. Ginger Lemon Girl
And finally you have my last minute one-pan meal of Hawaiian Pizza! It's a quick cheater recipe, using your favorite GF pizza crust! Enjoy!

Hawaiian Pizza - Go Ahead Honey It's Gluten Free, June 2008



Look good? I thought so too. We love pizza in the Ginger Lemon Girl household. We make pizza at least once every two weeks.

This pizza is actually my entry for this month's "Go Ahead Honey! It's Gluten Free!" The theme this month is one pot/pan meals. Kid-friendly if possible. And yes, today is the deadline for this month. No, of course I'm not behind in posting! (ha!)

I realize that many people do not consider pizza an entire meal. And having a good side salad never hurts, but I'm all for pizza being an all-in-one. You have lots of veggies, cheese, sometimes meat, and seriously yummy GF bread crust. Sounds totally healthy to me. :-) What else do you need??

Here is my personal favorite pizza. It's not really a recipe since I "borrowed" several other recipes in making it, but I still think everybody needs to try a Hawaiian pizza! Enjoy!



Gluten Free Hawaiian Pizza


1 gluten free pizza crust, such as Natalie's, or Carol Fenster's
1 recipe gluten free pizza sauce, such as Carol Fenster's
1 package Canadian bacon pizza slices (I used Hormel's)
1/2 large green pepper, diced
1 (10 oz.) can of pineapple tidbits, drained
1 1/2 cups shredded mozzarella cheese

Make pizza crust as directed. Let rise as directed and then bake crust at 400 degrees for 15 minutes. Remove crust from oven. Let cool slightly. Spread pizza sauce onto crust evenly. Layer with Canadian bacon slices, then pineapple tidbits, diced green peppers. Sprinkle mozzarella evenly on top. Return to oven and bake an additional 15 minutes or until cheese is melted and slightly browned. Let pizza cool for 10 minutes before cutting and serving. Enjoy!!
