Go Ahead Honey, It's Gluten Free - June 2008 Roundup


June 2008 Roundup




This month's theme was for one pot/pan meals. Kid-friendly if at all possible! I love quick, easy, one-pot dinners! We have a great group of folks who contributed this month! Thank you to everyone for participating and if I accidentally left anyone out, please email me ASAP, and I'll add you to the roundup!!



1. Gluten Free Kay
Kay was on the ball and entered early in the month! She made a delicious entry of homemade gluten free Shepard's Pie. This is one of my all-time favorite meals! I cannot wait to try Kay's version!






2. Rachel @ The Crispy Cook
Rachel at (formerly Wheat Free Meat free) The Crispy Cook, came up with an amazing one pot meal of spinach risotto! Risotto is one of those dishes I'm still trying to perfect and Rachel's looks amazing!! All I can say is WHERE is mine??






3. Johanna @ Green Gourmet Giraffe
One of the fun things about blogging is meeting people all over the world. Johanna hails from Australia, where recently she celebrated winter solstice, so one-pot meals of soups and stews are abundant! Johanna's dark stew looks mighty tasty! I love all the interesting ingredients she included in this stew!






4. Deliciously Gluten Free
Vittoria joined us this month with a one pot meal of tilapia! She included great pictures showing the process of how this yummy meal is made! Vittoria made this meal for her boyfriend who is a personal trainer. I love fish and I cannot wait to try out this meal!






5. Lauren from Celiac Teen
Have you ever seen a more beautiful red soup? Lauren joined us for the first time this month with her contribution of a roasted red pepper soup! Lauren included great "how-to" steps in making this soup, including roasting the peppers herself! Seriously impressive Lauren!






6. Sea @ Book of Yum
Sea has outdone herself again! She posted TWO amazingly delicious one-pot meals! The first is meal is a vegan cauliflower pie! I am always looking for new ways to use cauliflower and I cannot wait to try this!





The second meal Sea posted is another beautiful cauliflower dish with cheese in a hashbrown crust! I love Sea's creativity with gluten free crusts! This is another must try!







7. Cheryl @ Gluten Free Goodness
Cheryl joined in with her recipe for a lovely nightshade stew! A medley of tomatoes, chicken, green peppers, and fresh herbs make this dish. I love Cheryl's addition of serving avocado slices along with this delicious stew! Enjoy!







8. Chef Penny @ Lovin' Gluten & Casein Free
Penny joined us with gusto for the first time this month, with not only one, but two delicious one pot meals! Penny's first dish is a great naturally gluten free, frugal dinner using up leftover turkey and wonderful rice!



Penny's second dish is for a one-pot meal of ham and potatoes (one of my favorite combinations!) She once again does a fantastic job of frugally using up gluten free leftovers!







9. Gluten Free in the Greens
Kara participated for the first time this month with her one-pot meal "Tamale Pie." I had to giggle when I saw her post because this was originally the dish I chose to make for the event! But Kara's recipe is unique because she uses ground buffalo, cocoa powder, and a generous pinch of cinnamon! If I ever find ground buffalo for sale here, I have to try this recipe!





10. Ginger from Gluten Free in GA and FL
Ginger whipped up a fresh Greek pasta salad with yummy farmfresh veggies! Ginger wasn't able to get a picture of the salad, but if anyone makes it and takes a pic, please let me know so I can post it here! Sounds like a really wonderful one-dish salad meal!





11. Ginger Lemon Girl
And finally you have my last minute one-pan meal of Hawaiian Pizza! It's a quick cheater recipe, using your favorite GF pizza crust! Enjoy!
